Whether you prefer paninis pressed to crunchy perfection or grilled cheese griddled until richly golden there’s one thing I bet we can all agree on; there’s no better way to eat a warm, melty sandwich than with a bowl of soup alongside. And, while gooey American cheese between slices of toasted white sandwich bread will always be my favorite sammy for dunking, there are so many others that are worthy of a dip — even when you’re enjoying a soup other than tomato.

Sometimes the simplest recipes are the best. Like this one. Mild mozzarella gets a super salty upgrade with quick, homemade olive tapenade — making this panini the perfect partner for everything from chicken noodle to vegetable soup.
