Ree Drummond serves up her classic take on tacos by tossing shrimp with enchilada sauce — to bring out the tantalizing flavors of spices and chili peppers. To top things off, she creates a subtle yet refreshing jalapeno-cabbage slaw with vinegar, cayenne and mayonnaise. It’s the perfect complement a fiery dish with a tangy taste.

Seafood lovers unite! Tilapia and shrimp make a surprising (and delicious) blend of tender, seafood goodness. A simple seasoning of lime juice and fresh herbs gives the tacos a tangy taste that is light enough to not overpower the seafood. Keep an eye on the fish to make sure it cooks evenly — tilapia filets have one side that is thicker than the other.

An interesting (and refreshing) take on the shrimp taco: Grill the seafood with a brush of grapefruit marinade for a sweet and citrusy flavor. A simple grapefruit and red onion salad on the side adds delicious contrast — and makes a great topping for these tasty tacos.

There’s nothing better than ‘shrimp on the barbie.’ So, why not serve up a slightly charred shrimp taco (with all that sweet-and-spicy marinade locked in). Cilantro and lime wedges are a must along with the spicy sour cream coleslaw.
