Ingredients
  • Nonstick butter spray
  • 4 ounces bittersweet chocolate, chopped
  • 1 stick cold butter
  • 1 teaspoon vanilla extract
  • 2 ounces hazelnut liqueur (recommended: Frangelico)
  • 3/4 cup sugar
  • 1/2 cup cocoa powder, sifted
  • 3 eggs, beaten
  • Chocolate Ganache, recipe follows
  • Berries, garnish
  • Powdered sugar, garnish
  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup heavy cream

Preheat the oven to 375 degrees F. Spray an 8-inch round cake pan with nonstick butter spray and line bottom with parchment.

Put the chocolate, butter, vanilla and hazelnut liqueur in a large bowl on top of a double boiler. Stir the mixture frequently until combined and smooth. Remove the chocolate from heat and put the bowl into an "ice bath" to cool the chocolate.

Cook's Note: This step is important so the eggs will not cook when added to the chocolate. Mix in the sugar and cocoa powder. Stir in the eggs and pour into the prepared cake pan. Put the cake pan on a sheet tray and bake for 20 to 25 minutes.

Remove the cake from the oven and invert onto a rack over a sheet pan lined with parchment paper. Pour the ganache over the cake. Allow the cake to cool and set for 10 minutes before serving. Garnish with fresh berries and powdered sugar.

Chocolate Ganache:

Put the chocolate into a large bowl. Heat the cream in a small pot, over low heat, until hot to the touch. Pour the hot cream over the chocolate. Mix well with a rubber spatula until the chocolate melts.

I followed this recipe exactly, but used creme de cassis instead of frangelico. It was perfect. I lined the pan with parchment, baked for 25 minutes, and allowed the cake to cool completely before removing from pan. I had no trouble removing the cake from the pan with the parchment. I made a grown woman cry after tasting this, cooked it in a 9" silicone pan, which made it bigger and thinner, which is fine. It makes for more slices that way, which is OK because it's so rich. Made it twice, it's not too hard just take time and as directed wait for cooling before adding the eggs. Wow, this was an amazing cake. And so easy to make. I used a spring form cake pan after reading other reviews. Came out perfectly. The first time I made it I tried to transfer it to a pretty cake stand before it cooled enough and it deflated. The second time I waited until it was cool and had no problems. I used Godiva Liquor because that is what I had. I used dark chocolate for the ganache too. Absolutely amazing! Used coffee liquer (Blue Mountain, from Jamaica but followed this otherwise. Very easy to make and some powdered sugar on top instead of ganache is divine. Delicious. I followed the cake recipe exactly except that I substituted Kahlua for the Frangelico because it's what I had on hand. Texture and flavor were excellent--chocolately, but not too sweet. I had planned to make the ganache, but ran out of time. In the end, a little lightly sweetened whipped cream and dusting of powdered sugar were all that it needed. The ganache would probably have been delicious, but we didn't miss it at all. This is great to make ahead if you're hosting a dinner, and it would travel well if you needed to take a dessert to a potluck. Then, you don't have to invert it at all...just serve from the pan bottom. This is BAR NONE, the BEST chocolate cake recipe I have have ever come across. It is fast, easy, uses a minimum of ingredients, and technigues. I made this cake because I was craving chocolate!. I substituted 2 oz. of strong coffee for the Frangelico, and it worked very well. I decided to make this cake for Valentine's Day dessert, while my wife made our favorite meal. Now I'm pretty good in the kitchen when it comes to cooking, but I've never been much of a baker, so I was a little concerned about making this recipe. And I'll admit I did have a couple of flubs, first involving the first double boiler usage (excessive heat not good), and not chopping the chocolate fine enough for the ganache (but by now I'm good with a double boiler, so that came to the rescue :) ). But these mishaps did not deter me. In fact, once I did everything right, this cake came out fantastic! It is incredibly rich; in fact, even though it says it serves 8, I think 12 is better. It really is very simple to make. I do recommend that if you are a novice, read up on how to properly use a double boiler. And to the one reviewer who said it was dry...that's probably because it was overcooked. Flourless cake cooks very quickly, and, as Mr. McCargo mentions, you cannot use the typical test on it. This was undoubtedly the most decadent chocolate dessert I've ever cooked. I used coffee liqueur because we were out of hazelnut. If you're looking for a watered down version with fake chocolate, i.e. icky milk variety, this isn't it. This is the full monty version. It's so rich & chocolatey that only a tiny piece can be eaten at once. Good thing, because that makes it last longer! This cake popped out of the pan beautifully (just be sure to run a knife around the edges). I subbed coffee for hazlenut liqueur because it is what I had on hand and it was scrumptious as well. The glaze was lovely but a dusting of powdered sugar would also be good, and little less rich. Recipe going in my keeper file to use and again and again. My husband and I made this last night. Served it warm with vanilla ice cream, strawberries and whipped cream. Heavenly! Stuck it in the fridge and had some cold today. Very fudgey! Maybe I didn't let it cool long enough, or maybe I didn't bake it quite long enough, but it fell apart when we tried to move it from the cooling rack to a serving plate. Next time I'll skip the rack and put it right on the serving plate to cool.
