Ingredients

  • 1 narrow Italian or French loaf of bread
  • 1 head garlic, cut in 1/2 crosswise
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and pepper

Preheat oven on broiler setting. Place a rack approximately 6 inches from broiler.

Slice the loaf of bread, on the bias, into 3/4-inch slices. Place bread in oven on sheet pan and broil until golden brown on both sides, approximately 2 minutes for the first side and 1 to 1 1/2 for second side. Remove to a platter and rub each slice of bread with the garlic and then brush with olive oil. Sprinkle with salt and pepper and serve immediately.

    Roast the Garlic

Rated: 5 stars out of 5
I roasted my garlic before I rubbed it on. (The roasting turns the garlic into a spread that is delicious!!!) Think... maybe Alton did this also on the episode, but I can't be sure as it aired awhile ago... Anyway, very traditional and yummy... Definitely "good eats" P.S. What's up with the Elton James thing? Read more

You need to squeeze the garlic as you rub it and remove as much peel as possible. Don't smash it into the bread, just rub it... vigorously with a little pressure.Read more

garlic rub messy, does not infuse much flavor

Rated: 3 stars out of 5
is there some sort of trick to getting the garlic rub to work? When I cut a head in half and rub it on bread, I just get a... lot of skin flakes from the dried lining in between the cloves and very little actual contact with the garlic inside the head. This just makes a papery mess on the bread with little garlic flavor. If you've figured out how to do this step gracefully, please post. If you're struggling like me, consider cutting a tomato in half and rubbing this on the toast and using a good garlic powder or some minced roasted garlic on top.Read more

I make this as a pre-dinner snack when hosting dinner parties and as a party food with a 3-layer dip....everyone always wants... to know how I made the bruschetta, and there is never any left. This one's a keeper.Read more
