Ingredients

  • 1 pound Brussels sprouts, as uniform in size as possible*
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon dry mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions

*Cook's Note: In order to facilitate even cooking, it is important that the Brussels sprouts be as uniform in size and shape as possible.

Heat a grill to medium.

Cut off the stem end of the Brussels sprouts and remove any yellowing outer leaves. Place the Brussels sprouts into a large, microwave safe mixing bowl and heat in the microwave on high for 3 minutes. Add the olive oil, garlic, mustard, paprika and salt and toss to combine. Allow the sprouts to cool until you can handle them. Skewer 4 to 5 Brussels sprouts onto each metal skewer with the stem ends facing in the same direction, leaving at least 1/2-inch in between each sprout. Place the skewers onto the grill with stem end closest to the flame. Cover and cook for 5 minutes. Turn the skewers over and continue to cook for another 5 minutes. Serve as is or for additional flavor, remove the sprouts from the skewers, return them to the original mixing bowl and toss with any of the remaining oil and garlic mixture before serving.

    Surprise! Brussels sprouts can actually taste good!

    I love Good Eats, but unfortunately there is rarely a recipe I can cook since I am vegan. When I saw this episode, I... immediately thought of my mom who LOVES Brussels sprouts. Personally, I've always hated them with a passion. But when A.B. said he would make believers out of the sprout-haters, and happened to demonstrate a vegan recipe I decided to go for it (not to mention after discovering the amazingly cook Brussels sprout stalks I just HAD to have one!) I followed the online directions, except I forgot the pepper before grilling. I cooked on medium heat 5 minutes each side (though I thought in the show A.B. had cooked 5 minutes for 4 turns instead of 2). Since it was dark outside I was just trusting the times in the recipe instead of looking for golden-brown or anything, though I think it could have gone quite a bit longer. I found the darkest ones to taste the best. And they were FANTASTIC! I added a bunch of pepper to mine after they were finished, but my parents said they were great even without the pepper. I can't believe Brussels sprouts actually taste good!Read more

    I didn't like brussels sprouts till I tried this recipe. THe kids still haven't caught on, but that just means more for... me. To skip out on some of the busy work, we just throw the sprouts in a grill basket rather then skewer them all. They still come out browned and carmelized on the outside.Read more

    These are amazing!!! My mother brought home brussel sprouts, and I thought, well, i'll give that brussel sprouts episode a... whirl, Alton had changed my mind about many things before. I am a convert. These are wonderful!!! I will say, if mustard isn't your thing, use less than the smoked paprika, i've had a few with chunks of mustard that aren't amazing for my palate, but every one I get with the paprika makes me want to swoon. Smoked paprika is a must, believe me, it makes a difference. I rotated them every minute for the first 5 minutes, then let them sit on each side for 3 minutes. They're soft, but still chewy. I will be making these again for a long time!!Read more

    Awesome and Easy - My favorite kind of recipe!!!

    I made these with grilled steak and baked potatoes the first time, and they were a huge hit! Since then, they have become a... weekly side dish for our family (we grill alot, living in the South) with everything from simple grilled burgers and dogs to fancier steaks, tenderloins and marinated chicken breasts. Tonight I am going to add mushroom and broccoli floret skewers and try doubling the marinade and using it on everything, since I have one child who won't touch a Brussels sprout but loves mushrooms and broccoli. Since I am disabled and complicated time-consuming recipes are too much for me, this one is a definite winner in my house! We just LOVE Alton Brown, too!!!Read more

    Triple this recipe - It's the best

    I prepared 3 lbs of sprouts thinking that I would have leftovers. Four of us ate all of them right off the bamboo skewers... and there was a small fight over the last skewer. We had them with honey glazed blackened salmon and a couscous and roasted pine nut side dish. I used slightly less salt and substituted sweet paprika. They marinated for over an hour after microwaving and before grilling. I did not toss them with the left over marinade after grilling. I also ignored the grill time in the recipe. I have an electric indoor grill and am used to grilling vegetables until they have nice brown marks rather than for a specific time. Definitely not a quick dish because of the skewering. If you use bamboo skewers you can fit 5 sprouts per skewer. One thing I really liked about this recipe is that you can make it in advance and then put on the grill after guests arrive. Microwaving cuts down on the grill time and ensures that the sprouts are evenly cooked. Normally I would not be so daring as to serve brussel sprouts to guests but this recipe was a huge hit.
