This simple grilled side dish couldn't be easier. I toss the Brussels sprouts and red onion with a little oil, salt and pepper and grill them using a grill basket. The smoke from the grill adds an extra layer of flavor. Once they're cooked, I toss the veggies with a simple vinaigrette. Doesn't get easier than that!
For the Brussels sprouts: Preheat the grill to medium-high heat (425 degrees F).
Toss the Brussels sprouts and onion with the olive oil, salt and pepper in a nonstick grill basket. Place the basket on the grill rack. Cover and cook until the Brussels sprouts begin to soften, 8 to 10 minutes. Uncover and stir the vegetables. Cover and cook until the vegetables are charred and crisp-tender, about 2 more minutes.
Remove the vegetables from the basket to a serving bowl.
For the dressing: Whisk together the mustard, vinegar, honey and olive oil in a small bowl. Season with salt and pepper. Pour the desired amount of dressing over the Brussels sprouts and toss to coat. Serve warm.
