Banana Pancakes

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup whole milk
  • 1 tablespoon melted unsalted butter, plus 3 tablespoons
  • 3 ripe bananas, cut into 1/3-inch slices
Directions

Preheat oven to 200 degrees. In large bowl sift together flour, sugar, salt, baking soda and baking powder. In separate bowl whisk together egg, buttermilk, milk and melted butter. Slowly combine the dry ingredients with the wet ingredients. Stir until the flour disappears, but being careful not to overbeat the batter. In a large cast-iron skillet, melt about 1/2 tablespoon remaining butter. Ladle about 1/4 cup of batter into the pan for each pancake. Immediately press 4 or 5 banana slices into each so the batter oozes slightly over the fruit. Cook until bubbles appear and then flip and cook on the other side, about 3 minutes total. Transfer the pancakes to a platter and keep warm in the oven while you cook the remaining batches, adding butter to the pan as needed. Serve hot with syrup.

    These pancakes are delicious and easy to make. I used plain yogurt instead of buttermilk and they came out great!
    The batter was very thick, leading to pretty substantial pancakes. The only thing I did differently was to put the slices of banana straight onto my griddle and then put the batter over, so they were able to get a bit caramelized. I also mixed in 1 banana into the batter for more banana-ness. Yummy!  
    Also, if the pancakes aren't fluffy or don't rise at all, its because an ingredient is old, or something was forgotten. This is a good recipe.
    Absolutely, positively scrumptious. I love buttermilk pancakes and the banana slices give it a sweet and creamy taste! : I almost didn't need any syrup, just a pat of butter. My kids loved them, they gobbled them up and asked for more! This is a recipe I will keep and make again and again! :
    the pancakes were super fluffy and came out great. i made 9 thick and delicious pancakes. INJ, maybe overmixing was the problem? the batter was really lumpy when i began making them and it worked fine. there were no flour pockets or anything. my variation: added about 2 tsp of cinnamon and used 1 1/4C buttermilk (made with lemon juice and lowfat milk).

    gwenabee why would you post that you would omit bananas on a BANANA pancake recipe?
    These were delicious! I am a pancake hater, ever since I was a child. I don't like pancakes but these were so very good. The only thing I would omit would be the bananas. They don't mesh well with the overall flavor of the pancakes. These pancakes are very thick, more like French Toast than a pancake! Enjoy!
