Directions

  1. Puree 1 mashed banana, 2 whole eggs and 2 egg whites, 1 cup rolled oats, 2 tablespoons whole-wheat flour, 1 tablespoon each sugar and baking powder, 1/8 teaspoon vanilla and a pinch each of cinnamon and salt in a blender until smooth. Stir in 2 teaspoons chia seeds. Cook 1/4 cupfuls in a hot buttered skillet until golden. Serve with berries and syrup.
