BLT Pasta Salad

Ingredients

  • 12 ounces corkscrew-shaped pasta
  • 1/2 cup milk
  • 12 ounces lean bacon
  • 3 medium ripe tomatoes, cut into chunks
  • 1 tablespoon chopped fresh thyme
  • 1 clove garlic, minced
  • Kosher salt and freshly ground pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 4 tablespoons chopped chives or scallion greens
  • 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts

Directions

Cook the pasta in a large pot of salted boiling water as the label directs. Drain and toss with the milk in a large bowl; set aside.

Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Drain on paper towels. Discard all but 3 tablespoons drippings from the pan. Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper. Crumble the bacon into bite-size pieces; set aside 1/4 cup for garnish. Toss the remaining bacon and the tomato mixture with the pasta.

Mix the mayonnaise, sour cream and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper. Add the lettuce; toss again to coat. Garnish with the reserved bacon and the remaining 1 tablespoon chives. Serve at room temperature.

    I've made this like 5 times now because people are OBSESSED with this salad! The warming of the tomatoes with the garlic and... bacon grease really makes it rule. People demolish it every time its made, and leftovers never last. I agree with the lettuce getting soggy though. You really need to get the pasta thats in the photo, too. Read more

    In a pinch I used Oscar Meyer real bacon bits and grape tomatoes. To cut the fat I used Miracle Whip and fat free milk, low... fat sour cream and no bacon grease and it was still fabulous!!!! Also, I kept the lettuce seperate until serving.Read more

    I made this with Barilla Plus bowtie pasta. It is multi-grain, high fiber without the overwhelming taste of whole wheat... pasta. My entire family loves it, even my picky teenager.     Great Recipe for those who do not like salads!

    My husband is a meat and potato kind of guy. You mention salad and he runs. I made this for him a few weeks ago. We loved it.... Since I have made it two more times. It is easy to make and great for the summer. Since there is only two of us when I refreigerate the leftoevers I keep tha lettuce potion on the side to avoid getting it soggy. I highly recommend this recipe. At least try it once!Read more

    I made this for the 4th of July. I basically tripled the recipe because there were about 30 people and there was not a scrap... left! Several people wanted the recipe and I just told them to go to the Food Network website to get it!     I thought that this was a great recipe in theory. I would prefer it to have a more flavorful base rather than just... mayonnaise and sour cream - all I could taste was mayonnaise. It is also extremely fattening! If I were to make it again I would probably add about half of a ranch or italian seasoning packet to the base and use reduced calorie ingredients. Read more
