Ingredients

For the wings:

  • 1 cup hot sauce
  • 1/2 cup honey
  • 6 tablespoons unsalted butter
  • 1 tablespoon red wine vinegar
  • Salt
  • Freshly ground black pepper
  • 24 chicken wings, tips removed

For the blue cheese-celery dipping sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup finely diced celery
  • 1/2 cup crumbled blue cheese (recommended: Cabrales)
  • 2 tablespoons finely chopped fresh chives
  • Salt
  • Freshly ground black pepper

For the wings:

Directions

Heat grill to medium-high.

Combine the hot sauce, honey and butter in a small saucepan and cook over medium heat until the butter is melted and the mixture comes together, about 5 minutes. Stir in the vinegar and season with salt and pepper. Pour half of the sauce in a bowl and keep the remaining sauce in the pan, warm over low heat.

Season the wings on both sides with the salt and pepper. Brush the wings with the reserved sauce in the bowl and place on the grill. Grill on each side for 5 minutes or until golden brown and cooked through. Remove wings from the grill and toss with the warm hot sauce. Transfer to a platter and serve with the blue cheese sauce on the side for dipping.

For the blue cheese-celery dipping sauce:

Whisk together all ingredients in a medium bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.

    We used this sauce on legs instead of wings because "drummies" have more meat. I baked the legs at 375 degrees for 20-25... minutes. About 15 minutes into baking I heated the sauce on the stove, then used half of the sauce to coat the legs; I baked them for 10-12 minutes more after coating. Then, I turned the legs and coated them with the remaining sauce and baked for another 10-12 minutes. I thought they had a great flavor that everyone enjoyed and the meat fell off the bone! I am definitely going to save this recipe!Read more

    I normally try a recipe first and then make changes later. I had a problem with the 5 minute per side grilling time and also... with this sugar based sauce. Of course they will burn with the honey. The sauce is good for the timid, not for hot wing lovers. Best to bake wings in the oven first and then dredge them in the warm sauce when done.Read more

    Unfortunately I didn't bother with my charcoal grill in 110 degree temps so I followed Brian's advice to do on stove top and... oven. Grease all over everything within a 2 foot radius of the skillet! Then I wasn't blown away with the sauce. These were good but just deep fry and use Frank's Hot Sauce & butter.Read more

    Lol, Katie -- I know excactly what you mean! (My family always shares a laugh when remembering that scene from "What About... Bob?" It's great.) The recipe is fantastic. Like Katie, I didn't have access to a grill, so I seared the wings in a cast iron pan in 2 tbs oil, 2-3 minutes a side, and then poured the hot-sauce glaze into the skillet and roasted the wings for 20 minutes at 400 degrees. (This is a way that I learned to do chicken wings from Rachael Ray.) Then I reduced the glaze on the stovetop. The wings came out so incredibly good, and the bleu cheese dressing is fantastic! The little chopped celery adds a wonderful crunch. Thanks Bobby Flay for the great recipe!Read more
