The hot honey glaze takes these spiced apple fritters to another level. Best served warm, this is the perfect autumn sweet treat. My tip here is to keep the fritters hot and crispy in a 250-degree-F oven until they are all fried, then glaze all at once and serve immediately, ideally with an espresso or coffee.

For the glaze: Add the confectioners’ sugar, butter, hot honey, warmed milk, vanilla bean paste and salt to a small bowl. Stir to combine. If the mixture doesn’t come together right away, microwave for 20 seconds, then stir, and the glaze will be smooth and glossy. Microwave again right before glazing the fritters.
For the fritters: In a large bowl, add the flour, granulated sugar, baking powder, spices and salt. Whisk to combine. In a medium bowl, add the buttermilk, eggs, butter and vanilla. Whisk to combine. Slowly pour the milk mixture into the flour mixture and fold until just combined. Gently fold in the diced apples. (It will look like a lot of apples, but the dough will puff up once fried.)
Heat 2 inches avocado oil in a medium heavy-bottomed pot over medium-high heat until a digital candy thermometer registers 375 degrees F. Set a wire rack in a rimmed baking sheet right next to your frying station.
Working in batches, drop heaping 1-tablespoon-sized portions of dough into the oil. Use a small ice cream scoop here for evenly-sized fritters. Cook, turning once after about 90 seconds, until puffed and golden, 3 to 4 minutes total. Transfer to a rack with a slotted spoon or spider. Let cool slightly, then dip quickly into the glaze on all sides and serve warm, ideally with a cup of coffee or tea. Dust with confectioners’ sugar.
