Ingredients

  • 2 cups instant couscous
  • 2 cups boiling water
  • 1 teaspoon salt, plus more for seasoning
  • 1 teaspoon finely grated orange zest
  • 2 tablespoons fresh orange juice
  • 2 tablespoons red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/2 medium onion, thinly sliced
  • 1 orange, peeled, segmented and diced
  • 3 tablespoons finely chopped fresh mint leaves
  • 3 tablespoons finely chopped fresh flat-leaf parsley
  • 1 head radicchio, shredded
  • Freshly ground black pepper
  • Toasted slivered almonds

Directions

Put the couscous in a large bowl, add the 2 cups boiling water, 1 teaspoon salt and orange zest, then cover and let steam for 5 minutes. Remove the cover and fluff with a fork.

Whisk together the orange juice, vinegar and olive oil in a small bowl. Add half of the dressing to the couscous along with the onion, orange, mint and parsley and gently combine with a fork.

Put the radicchio in a bowl, add the remaining dressing and season with salt and pepper, to taste. Transfer the couscous to a large platter, top with the radicchio and garnish with slivered almonds.

    Watched this again today to see what the recipe changes were. On the show he starts out with what looked like about 2 tablespoons Dijon mustard (he didn't say how much and mixed that into the oj, vinegar and olive oil. Then the also used green onion (scallions and sliced them thinly using just the green stems. The recipe says to use regular onion which I think makes a difference taste wise. These changes make the couscous 5 star in my book but I don't it tasted bad without the dijon and using regular white onions either.

    I finally found a recipe for couscous that my family will eat! This was so easy and so big on flavor. Like the other reviewer I made a little bit more dressing .You have to try it! Thank you Bobby.

    I didn't really pay close attention to Bobby making this recipe on "Grill It" because I figured that I would just print it off of the computer later. I am really glad that I read the first review! (Thank you! The recipe does not mention anything about Dijon, but after reading the transcripts for the show it is clear that Bobby added this to the recipe on-air. Aside from that little snafu...The recipe is AMAZING! Couscous always tends to be dry. The dressing really made a difference. As for the dijon...I just added and whisked until it tasted good.

    One Note: I did make a little more of the dressing than the recipe calls for since the couscous soaks it up.
