Ingredients
- 8 ears corn
- 4 fresh limes, quartered
- Garlic butter, recipe follows
- 1/2 cup grated cotija cheese
- 2 tablespoons chopped chives, for garnish
Directions
Preheat grill to medium. Peel back the husks of the corn without removing them. Remove the silks and recover the corn with the husk. Soak in large bowl of cold water for 30 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes.
Unwrap corn and brush with the garlic butter. Sprinkle with the cotija cheese and squeeze with lime. Sprinkle with chopped chives, to garnish.
Garlic Butter:
- 2 sticks unsalted butter, slightly softened
- 8 cloves garlic, peeled and coarsely chopped
- 1/4 habanero pepper, seeded
- 1/4 bunch fresh chives
- Salt and freshly ground black pepper
Combine butter, garlic, habanero, and chives in a food processor and process until smooth. Season with salt and pepper. Set aside until ready to use.

FANTASTIC! Super yummy and so much better than your average COTC. I'll definitely be making it this way from now on. It was quick and easy to make, too. But for the life of me, I could not find Cotija cheese - not at my Wal-Mart, nor my local supermarket. I decided to use some fresh parmesan that I had leftover in the fridge as a few other reviewers had done. I also used half a jalapeno as habaneros seemed too scary for me, but turns out that I could hardly taste any heat at all, so I may try it next time.
I only had to make three ears of corn and had a ton of this awesome butter left, so I grilled a few slices of crusty bread on both sides and slathered it with the butter. So amazingly good!
Lots of garlic flavor, so be warned. I love the idea from another reviewer of cutting off the corn into a big bowl and putting a big dollop of the butter in the middle and mixing it all up.

Amazing! I have made this 2 times now and have gottem raves all around both times. My mother-in-law even asked to take some of the left over butter home with her. I haven't been able to find the Cotija cheese yet but use what ever I have on hand. I would like some suggestions on what to do with the left over butter.

Loved this, found the cheese at Walmart. Used Jalapeno pepper for milder flavor. Will make this again and again. Cotija cheese is great in all kinds of Mexican dishes.
