Grilled Sweet Potato and Scallion Salad

Ingredients

  • 4 large sweet potatoes, par-cooked and cut into 1/2-inch slices
  • 8 scallions
  • 3/4 cup olive oil, divided
  • 2 tablespoons Dijon mustard
  • 1/2 cup cider vinegar
  • 1/4 cup balsamic vinegar
  • 2 teaspoons honey
  • Salt and freshly ground pepper
  • 1/4 cup coarsely chopped flat-leaf parsley

Directions

Preheat grill to high. Brush potatoes and scallions with oil and arrange on grill. Grill potatoes for 3 to 4 minutes on each side, or until just tender. Grill scallions until softened and marked. Remove scallions from the grill and cut into thin slices.

In a large bowl, whisk together 1/2 cup olive oil, the mustard, vinegars, and honey. Season with salt and pepper, to taste. Add potatoes, scallions, and parsley and toss until potatoes are well coated. Transfer to a platter and serve.

    i just made this last night - not from this recipe but from memory of seeing part of the show where this was cooked... (grillled) with barbeque pork ribs. i used this salad as a side dish to greek lamb burgers - and the combination had enough conflict to just work out great. this is a very fine recipe and side dish. not 5 stars because there is a better grilled sweet potato salad that has chopped cilantro and grilled corn plus red sweet pepper in it.Read more

    I halved the recipe and would definitely use less vinegar next time. After mixing it it was WOW so powerful so I added some... more olive oil and put it in frig. It mellowed out some but I would still go lighter on the vinegar. I did like the flavor.Read more

    We were really excited to try this recipe especially since it had a 5-star rating. However, we were disappointed with the... final outcome because we thought the vinegars really overpowered the taste of anything else. Next time, I think I will try it with half the vinegar it calls for.Read more
