Ingredients

  • 4 large sweet potatoes, scrubbed
  • 1 1/2 cups heavy cream
  • 1 tablespoon chipotle peppers in adobo, pureed
  • 1 stick unsalted butter, softened
  • 1/4 cup creme fraiche
  • 1/2 cup maple syrup, plus 2 tablespoons
  • Salt and freshly ground pepper
  • Nonstick cooking spray

Directions

Preheat oven to 375 degrees F.

Place potatoes on a baking sheet and bake in the oven until soft, 45 to 50 minutes. Remove the potatoes from the oven and let rest 5 minutes. Slice potatoes in half lengthwise and carefully scoop out the flesh, being careful not to damage the skin. Rice the flesh in a ricer set over a bowl.

Bring the heavy cream and chipotle puree to a simmer over low heat in a small saucepan. Stir the warm cream, butter, creme fraiche and 1/2 cup of the maple syrup into the sweet potato mixture until combined. Season with salt and pepper, to taste. Spray the baking dish with cooking spray. Fill each of the skins with the cream mixture, place back on the baking sheet and bake until golden brown. Remove the potatoes to a platter and drizzle the tops of each with the remaining maple syrup.

    Oh, So you have a real problem with recipes claiming vegetarian do you? WELL I HAVE A REEEAALLLLLY BIG PROBLEM WITH DUMB... REVIEWERS LIKE YOU WHO FEEL THE NEED TO GIVE NEGATIVE FEEDBACK TO RECIPES ABOUT THINGS THAT DON'T MAKE SENSE! I don't see anything on Bobby's recipes implying that this is a completely vegetarian recipe. What are you basing that on??? That the main ingredient is a vegetable?? WOW NEWS FLASH miss Omaha-- I think we can all tell BY LOOKING AT THE INGREDIENTS that this recipe is fattening but if you didn't want a fattening recipe or you insist on freekish vegan ways then go find another recipe!     This is delicious because it has more animal fat in it than 2 pounds of filet mignon! I have a real problem with recipes... claiming to be vegetarian then adding sour cream, heavy cream, and butter to it. The reason for being a vegetarian is to eliminate animal fats from your diet, not disguise them so you feel like you're eating healthy. Read more

    We enjoyed this. I halved the recipe because it was just my husband and I who were eating tonight. I also used half and... half and light butter to help reduce the fat content. There was still twice as much cream mixture as needed. Otherwise it was very good. Not sure i could really taste the chipotle. I used real maple syrup.Read more

    I warmed all of the ingredients in a sauce pan just before the potatoes came out of the oven... the potatoes were good so... good. But the best part was that I had leftover chipoltle cream sauce which I used over top of the baked chicken breasts and that was WONDERFUL! From now on I'm keeping this recipe not only for the potatoes but for the sauce to go on other things!! YUM!Read more

    "I hate sweet potatoes"...oh no..."I don't eat sweet potatoes"...stop those comments for life! The hit of every 49ers... Tailgate, Thanksgiving, Christmas, Wednesday night dinner. Agreed though...skip the "twice baked" idea.....just mashed potatoes it is for our gang. You'll never want your sweet potatoes any other way, EVER again. How sweet (and hot) it is.
