One of my daughter’s favorite treats is hot cocoa. She’d drink it by the gallon if I let her! Here’s a recipe that's perfect for warming up your chilly days and also a fun activity to do with the kiddos – hot cocoa surprises! These are a must-try, whether you're hosting a cozy gathering or wanting to craft an edible gift for friends. They’re as fun to make as they are to watch melt into a cup of hot milk. Who wants cocoa?!

Special equipment:
6 standard cupcake liners
  1. Melt the Chocolate: In a microwave-safe bowl, microwave the chocolate in 20-second intervals, stirring between each, until the chocolate is smooth and fully melted. 
  2. Line the Cupcake Pan: Place 6 standard cupcake liners in a cupcake pan or on a baking sheet for easy handling.
  3. Create the Chocolate Base: Spoon roughly 2 tablespoons of melted chocolate into each cupcake liner. Using the back of the spoon or a silicone brush, spread the chocolate halfway up the sides of each liner, creating a chocolate cup. Make sure the chocolate is the same height all the way around and also thick enough on the sides to hold in the surprise!
  4. Chill the Cups: Pop the cupcake pan into the fridge for 10 to 15 minutes or until the cups have set. The chocolate should be matte, not shiny.
  5. Mix the Cocoa and Marshmallows: Mix the hot cocoa and dehydrated marshmallows in a small bowl, then spoon a heaping tablespoon of the mixture into each chocolate cup. If you want to add anything else at this step, go for it! Sprinkles, anyone? If there's any mixture leftover, add it to any cups with space, ensuring not to overfill beyond the chocolate sides. 
  6. Seal the Surprises: Warm the remaining melted chocolate slightly, if needed. Spoon it over the marshmallow mixture in each cup, sealing the hot cocoa surprises. Make sure to cover them completely and smooth out the tops with either the back of a spoon or by gently tapping the pan on a flat surface. Let set for another 3 to 5 minutes in the fridge.
  7. Decorate (Optional): Drizzle with melted white chocolate and sprinkle on some crushed candy canes or festive sprinkles to give your hot cocoa surprises some extra holiday flair.
  8. Chill and Set: Place the completed hot cocoa surprises back in the fridge for another 10 minutes to fully set.
  9. Serve and Enjoy: When you're ready to enjoy a cup of hot cocoa, simply place 1 hot cocoa surprise into a mug of hot milk and stir to combine. Cheers to sweet moments and warm sips!
