Caramelized Onion Dip

Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups thinly sliced onion
  • 2 teaspoons chopped fresh sage leaves
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • Potato chips, for serving

Directions

Heat oil in heavy medium saucepan over medium-low heat. Add onions and sage. Cover and cook until onions are deep golden brown, stirring occasionally, about 20 minutes. Remove from heat and let cool.

Whisk together mayonnaise and sour cream in a medium bowl to blend. Stir in the cooled caramelized onions, salt, and pepper. Cover dip and refrigerate until flavors blend, about 2 hours.

    Instead of using the Sage this called for I added dill to the sour cream and mayo mix. I also added minced garlic to my... onions. I have to say that was a big hit with my friends. I do agree that this needs to set at least a couple of hours before serving so all the flavors can combine. The longer is set in the fridge the better it was. I used it with the roasted veggie crackers. This would also go well with the hawaiian bread.Read more

    This definitely needs to "marry" flavors in the fridge for a couple hours after mixing. It took me at least 40 minutes to... caramelize the onions as directed, so make sure to allow extra time. I also added a splash of worcestershire sauce and some chives. Taste it first with the chip/cracker you are going to use before you adjust the seasonings, as an extra salty chip will make the dip seem too salty.Read more

    I made this for my husbands 30th birthday party and what a hit! It was so good that i had to put it in the back of the... refrigerator so that it would actually make it to the party!
