Ingredients

  • Vegetable oil
  • 4 tilapia fillets
  • Salt
  • 1(1-inch) piece fresh ginger, peeled and grated
  • 1 lemon, zested and juiced
  • 1/2 pound snow peas
  • 4 small red potatoes, quartered sliced into 1/4-inch pieces
  • 1 cup coconut milk

Directions

Special equipment: brown paper bags

Preheat oven to 350 degrees F.

Soak 4 small brown paper bags in vegetable oil until saturated. Scrape off excess oil and set aside. Season the fillets with salt, grated ginger, lemon zest and juice. Top each with about 5 or 6 snow peas and 1 of the thinly sliced potatoes. Transfer each fillet into 1 of the bags and pour about 1/4 cup of the coconut milk into each bag. Fold well to seal in juices and steam. Place onto 2 rimmed baking sheets and bake until bags are puffed and fish and potatoes are tender, about 10 to 15 minutes. Serve immediately at the table in the puffed bags. Tear open.

    BEST RECIPE I'VE TRIED SO FAR! I highly recommend seasoning both sides of the fish liberally, and adding a touch of seasoning to the potatoes as well to your liking once removed from the oven. Also,around five minutes into cooking my fish, I decided to read reviews and saw the warnings of raw potatoes and increased my cook temp to 415 degrees for the last fifteen minutes. I used brown paper bags and the only critique I would have is be careful with the oil. Soak the bags; don't drown them. The ginger and lemon were a match made in Heaven in my mouth! ABSOLUTELY DELICIOUS!! For those who plan on taking for lunch the next day, nix the bag and just put the food into your 'to-go' container. Better to avoid the big greasy mess :

    This was very tasty but could have used twice the ginger and lemon zest. I did read the reviews on undercooked potatoes and changed a couple of things. I put the potatoes in the microwave for about 3 minutes after cutting them up but well before assembling the ingredients (so they could cool first. I checked the fish after 20 minutes, and the center was raw. I ended up cooking the bags for 40 minutes total, and everything was nicely cooked. I will make the dish again... the whole family enjoyed it.

    I LIKED IT TO MY SUPRISE. I DID NOT USE SNOW PEAS, CUT MY RED POTATOESVERY THIN AND SEASONED BOTH SIDES OF THE FISH.
