Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 stick butter, melted
  • 1/4 cup honey
  • Special equipment: paper muffin cups and a 12-cup muffin tin

Directions

Preheat oven to 400 degrees F.

Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.

    I read the comments before making this recipe. I too substituted buttermilk for the whole milk. I also copied the idea of... using a cast iron skillet to bake it, however, I preheated my skillet as I preheated the oven. I baked it for 20 minutes since the skillet was already hot - should have gone maybe only 18 minutes. It was great! No more not being able to have cornbread just because I don't have a box mix. This recipe is a keeper for us as well. I agree, not a fan of watching the Neeleys. Just too fake and forced for my taste. I think FoodNetwork would do well having them tone it down a bit.Read more

    I also made this recipe along with some chili. Instead of muffins, I just used a casserole pan. The baking time had to be... adjusted to about ten to fifteen minutes longer with the casserole. My fourteen month old has some allergies, so I'm cautious on what I feed him. He was begging for more of this honey cornbread ;-). The next day I heated a piece up for a snack. It almost tasted like cake. Enough said. An incredible keeper.Read more

    I love a recipe where all of the ingrediants needed are in my pantry! This recipe was really easy to make, and the clean up... was easy. I made this with margarine instead of butter, and skim milk instead of whole. I'm sure had I used butter and whole milk that these would have been even better.Contrary to other comments I did not find these at all too sweet (again maybe had I used real butter it would have been different). Overall, i'm very happy with this recipe and will use it again. Read more

    FINALLY! This one's a keeper!

    I've tried both Tyler's and Paula's cornbread ecipes and neither of theirs tasted quite right. Either bland flavor or... crumbly/dry texture or they just tasted "off". I don't ever watch the Neeley's show but decided to give this recipe a try. What could I lose, right? Well, I still don't plan to watch their show but this recipe is definitely a Keeper! Texture, flavor (we like our cornbread sweet) - everything was just right. I underbaked it by a few minutes to keep it from getting too dry and it turned out to be moist and full of flavor. Next time I'll probably add jalapenos. Read more

    The Neely's is one of the few shows on Food Network that I do NOT like. They are just a bit too cheesey for me. However, I... do like some of their recipes. Unfortunately, this wasn't one of them. Easy to make, but the honey flavor was just too strong. I like sweet cornbread, but the honey was too much. One word of advice...make sure your milk isn't too cold when adding the liquids. Our fridge keeps the milk very cold, and it caused the melted butter to start solidifying. If you like syrupy sweet cornbread, then you will like it better than we did.Read more
