Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 stick butter, melted
  • 1/4 cup honey
  • Special equipment: paper muffin cups and a 12-cup muffin tin

Directions

Preheat oven to 400 degrees F.

Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.

    I made this cornbread for the first time, and it turned out so yummy. I took Lyndsay's advice from Chicago and used... buttermilk instead of whole milk and baked it in a cast iron skillet. I also added a diced jalapeno. It turned out really great. My husband couldn't get enough!Read more

    I have made many cornbread recipes, including Ina Garten, Tyler Florence, etc. I like my cornbread sweet and a bit denser and... this was a huge hit. I use buttermilk instead of whole milk and cook it in a cast iron skillet. The trick, I heat the skillet in the 400 degree oven for about 5 min and then put solidified bacon grease (basically bacon fat/drippings that I put into a jar and refridgerate) in the pan, just enought to coat the pan to keep the cornbread from sticking. It is absolutely delicious. I serve it with chili or any southern cooked meal like pulled pork. Thank you for finally giving me the cornbread I LOVE! Read more

    I made these muffins with a rost chicken and they were delicious. I used splenda, fat free milk, and butter buds. They had a... very nice flavor and texture but I would have prefered them lighter and fluffier. That was the first time I had made corn bread homade and it turned out pretty well. The second time I made cornbread it did not turn out half as well. This was a quick and easy recipie that I would recommend for anyone to make. Read more
