Crunchy, sweet and tart, this take on a Mexican Christmas Eve salad is a refreshing side dish you need on the holiday table. Feel free to include other fruits, such as apple, pear or even pineapple!
Put the chopped romaine in a large bowl or spread out on a platter. Add the beets, jicama and oranges.
Whisk the orange juice, lime juice, mayonnaise, sugar, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Slowly pour in the olive oil, whisking.
Season the salad with salt and drizzle with the dressing. Top with the pomegranate seeds and peanuts.
