This easy hack makes putting this delicious root vegetable into your regular lunch or dinner rotation a snap. Scrub the potato under cool water with a stiff-bristled brush to remove any grit. Pat the potato dry. Prick the potato all over with a fork (this will ensure that steam can escape while it cooks). Rub the potato all over with the oil and sprinkle with a good pinch of salt and several grinds of black pepper.
Place the potato on a microwave-safe plate. Microwave on high until the potato is tender and easily pierced with the tip of a paring knife, 5 to 6 minutes. Cut the potato in half lengthwise and sprinkle the inside with a pinch of salt. Serve as is or with your favorite toppings.
