Ingredients
- 2 cups cooked and flaked salmon
- 2 eggs
- 1/4 cup all-purpose flour
- 1 onion, chopped
- 1 teaspoon black pepper
- 1/2 teaspoon seasoning salt
- 1 cup cornmeal
- Nonstick cooking spray
Directions
Preheat the oven to 350 degrees F.
Mix all of the ingredients, except cornmeal, in a large bowl. Using your hands, form the salmon mixture into small balls, and then roll the balls in cornmeal. Spray a cookie sheet with nonstick spray, arrange the balls on the cookie sheet, and flatten each ball on the surface.
Bake for 25 minutes or until browned. Serve hot.

I made this with a leftover salmon filet we'd grilled a few nights before. We don't have a good track record with leftover salmon--it tends to get tossed out after several days. My mother-in-law suggested several times that we make croquettes, but didn't have any recipes. I looked up several through a google search, but couldn't find one simple enough. A friend of mine suggested looking here, on foodnetwork.com, and lo and behold, I found this gem.
I did end up tweaking it slightly, since the initial mixture seemed a little "wet" for my tastes. I added 2 tablespoons of breadcrumbs, which fixed that, but then it was too dry. I then added two teaspoons (or so of the marinade I'd used to grill the salmon initially. That fixed the texture issue I had. I also fried the croquettes in vegetable oil, rather than baking, because I was impatient, and didn't want to wait for the oven to pre-heat. I also mixed the seasoning salt and pepper to the egg, and then beat them all together, so they would be distributed in the fish and onion mixture more uniformly.
My results were good. My children complained about the pepper content, so next time, I think I will halve the pepper, and maybe add parsley instead. I'll also chop the onions finer, since there were quite a few chunks lost in the coating and frying processes.

I just made these exactly as the directions called for. There was not much taste and will never try again. I did use a very good salmon which I just wasted on this recipe.

I Really Like this recipe , especially since it is Baked . I Did use Garlic and Herb Bread Crumbs instead of the cornmeal . Fantastic flavor !
