Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup powdered sugar, plus more for dusting
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup toasted pine nuts, chopped
  • 1/2 cup semisweet chocolate chunks or chips

Directions

Preheat the oven to 325 degrees F.

Combine the butter, powdered sugar, cocoa powder, vanilla, and salt in a large bowl. Using a hand mixer, beat the mixture until creamy, about 2 minutes. Add the flour, pine nuts, and chocolate. Stir until just mixed.

Line 2 baking sheets with parchment paper. Scoop out 1-inch balls of dough. Place on the cookie sheet. Bake until the tops look dry, about 18 minutes. Let cool for 15 minutes on the baking sheets. Dust with powdered sugar and transfer to a serving plate.

    I am not a big cookie lover but I really liked them. My husband is big on cookies and he absolutely loved them. He thought... they came from a professional bakery and this is the first time I baked cookies! What I did different was substituted 1 cup pwd sugar with 1/2 cup granulated sugar and 1/2cup dark brown sugar. I also added 1 tbsp of espresso pwd and walnuts instead of pine nuts. The result was divine! You should try this recipe. The best part is they are just right sweet. Perfect cookies.Read more

    Making those cookies I was surprised that there are no eggs and no baking powder like in most cookie recipes I know. Decided... to give it a try anyway. I am European myself married to an American and...I love them, but my husband hates them!     I don?t' think it is bland at all. Substitute Walnuts with Pine nuts and follow the exact recipe and I think it is sweet... enough. Oh, I added a tsp of espresso powder to bring out the chocolate flavor. (Big fan of Ina as well and that's what she does all the time when making chocolate dessert) After reading the reviews, I only baked for 15 min and let them sat for 10 min as well. They are very crumbly and scrumptious indeed but just not one of my favorite. Still think the lemon ricotta cookies are more heavenly. Read more

    Baking Tips to Avoid Crumbly Cookies

    For those who had bad experiences with the texture of the cookie: Make sure butter is at room temperature (and not melted... or cold), and ensure cookie is baked long enough (bottom of cookie should be golden bronw), and lastly, before removing from baking pan, let cool for 15 miutes, then place on cooking rack. Pesonally, I thought the cookie was sweet enough (especially after adding powdered sugar). Also, due to the ingredients (namely the powdered sugar), cookie texture will be light. Make sure to use good powdered chocolate!Read more
