Hazelnut Chocolate Chip Cookies

Ingredients
  • 1/2 cup old-fashioned oats
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup (packed) light brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 4 ounces English toffee candy (recommended: Heath or Skor bar), finely chopped
  • 1 cup hazelnuts, toasted, husked, and chopped
  • 1 (12-ounce) bag semisweet chocolate chips
Directions

Preheat the oven to 325 degrees F.

Line 2 heavy large baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside.

Using an electric mixer, beat the butter and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. Stir in the toffee, hazelnuts, and chocolate chips.

For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1-inch apart (do not flatten dough). Bake until the cookies are golden (cookies will flatten slightly), about 15 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely. (The cookies can be prepared 1 day ahead. Store airtight at room temperature.)

Followed recipe exactly except only used 1/2 cup of white sugar, because of a couple of reviews that mentioned the cookies being to sweet. Instead of cutting back on the sugar, I should have just made the cookies smaller if I was afraid they might be to sweet because the cookies turned out perfectly, but they needed that 1/2 cup of sugar. The texture of the cookie and the amount of cook time was perfect. I took them out at exactly 15 minutes, even though they didn't look done. After reading all of the great reviews, I was anxious to try this recipe. What a huge disappointment -- these cookies are overly sweet. They baked to a point of being almost crispy throughout with very little of that soft, chewiness that I think makes for a good chocolate chip cookie. These cookies were amazing!!! Although I did make one substitution. My real inspiration was the left over nuts I had from a nut clusters bag. There were lots of nut bits and crumbs (mainly almond and pumpkin. I followed everything to a T except I subbed the nut bits and crumbs for the hazelnut. I followed the recipe carefully but made a few test cookies - which is ordinary practice for me. You'll never get a better cookie. This recipe is extremely flexible. I couldn't find hazelnuts so I substituted with macadamia nuts. The little health bits gives the cookies an extremely interesting crackle. Next time I'm thinking about putting in white chocolate chips. Really great chocolate chip cookie recipe. I made them as a gift and put them in a decorative tin for an out of town guest who was visiting. I had made a different chocolate chip recipe which turned out hard and brittle and started over with this one which came out superb. Thank goodness. I just made these cookies and they are indeed amazing! For anyone who is diabetic, watching their calories, etc. these cookies work great using Splenda, Splenda Brown sugar blend and Brummel and Brown. I prefer this over Smart Balance as I find it to be creamier, taste more like butter and doesn't separate and get watery like Smart Balance does, plus the calorie content is the same or better. I'm just as pleased and satisfied as I would be with the original recipe. I left the oats whole for the chewy texture. I was worried with all of the sugar etc. that they would be too sweet, but they're just right. The texture is amazing, cooked mine on an Air Bake cookie sheet sans parchment paper. They turned out a bit fluffy, but with crispy bottoms and edges. The fluffiness may be from the substitutions, but it wasn't bad and the candy and nuts gave them substance. This recipe is incredible! Some of the best cookies I have ever made. They were the perfect density, crunchy on the outside and chewy on the inside. I bought pre-chopped hazelnuts and it made the recipe really quick to throw together. Not sure if it was the size of my cookies or my oven, but they took about 22 minutes to turn golden brown. These cookies were excellent! Do not change anything about them, all of the ingredients went together perfectly-the hazelnuts, the heath bars, sugars, YUM!!!! My family ate 3 batches of them in just a few days, they LOVED them. These are probably some of the best cookies that I have ever made. However, one thing to consider when buying ingredients for this recipe. Try to find already shelled hazelnuts as shelling them with a nutcracker is a pain. I made the mistake of buying nuts with the shells still on them (I had never cooked with hazelnuts and was not very familiar with them) and it took a big effort to crack all of the nuts. Great! Made the dough one day before making them. Baked up beautifully and in exactly 15 minutes. Parchment make it super easy and no clean-up. In fact the 5 minute cooling off time in the baking pan wasn't necessary as they easily slid off the parchment onto the rack (and yes they held their shape). DO NOT, I repeat DO NOT substitute anything in this recipe- especially the hazelnuts! Go to your local organic grocer, grab some fresh hazelnuts, toast them, chop them, and throw them into these cookies! The hazelnuts and the toffee are what ABSOLUTELY make this recipe! this was my first attempt of baking these cookies and it turned out to be a stomach pleaser. i did make a few changes to the ingredients, instead of hazelnuts, i put in sliced almonds. i also used rolled oats which i did not chop up finely because i did not have a food processor. on my first batch, i baked it for close to 25 minutes because it was not turning a golden brown like the directions had said and probably also because when i dropped the cookie dough on the liner, it was not an average cookie size and much larger and so when i baked it, it spread even more. they were crunchy/crispy but still good. the second batch i put in, same amount of cookie dough on liner but shorter time, 19 minutes, they came out close to perfect. the third batch, smaller amount of cookie dough, baked for 15 minutes, perfect. family enjoyed and sandwiched two cookies with cool whip in between. a definite must have for late night snacking. it was definitely yummy in my tummy. item not reviewed by moderator and published

I'm only 11 years old, and I could even pull off this recipe! I've made these cookies tons of times and a lot of people tried them. They ALL said it was excellent! WOW! I didn't use English toffee candy because it wasn't available to me. Also instead of using parchment paper, I used waxed paper just because I had it around the house. I had to bring down the temperature to 255 degrees because my oven is warmer than others.The cookies were still a perfection! The cookies its self is gourmet and rich in taste. The chocolate chips are creamy, warm, and moist. The hazelnuts are crunchy and nutty, and they complete the whole cookie! Be careful not to leave the cookie in the oven for too long or else they will get really crunchy, or burn. I 100% recommend this delightful treat. I'm pretty sure you'll like it :). I've made these cookies several times now, but it took a few tries to get the hang of it. The first time I made it, I followed the recipe to the T, but the cookies ended up being a little too tough. My oven tends to get a little hotter than others, so 10-11 minutes is the perfect time...crispy on the outside, chewy on the inside. I just pull the cookies out when they are still soft in the middle and allow them to cool and they turn out perfect. Also, I actually like almonds in there more than the hazelnuts. My favorites, so good! I made a double batch and froze the extra. I didn't put as much hazelnut in because I over toasted 1/2 of them. They were still so good. Wound up having to cook the extra dough and give them away because it was too dangerous to keep in the freezer. I toasted the hazelnuts in the oven, next time I'll so it stove top to keep a closer eye. I'll refrain from pulverizing the oats per other reviews to see how that affects the cookies. I have tried a few recipes by Giada in the past. This was my first dessert recipe. I am making the cookies as a thank you gift for someone and decided to make my batter in advance and bake a few off just to see how they would turn out. The cookies were DELICIOUS! I personally love toffee bits and hazelnuts so this was perfect for me. I could easily see changing out the types of nuts you use or perhaps even the chocolate. I had originally wanted to put in Lindt Chili Chocolate for the chocolate pieces but decided to play it safe for this time around. I brought the cookies in to work and everyone LOVED THEM. Someone here mentioned finding that the toffee made the cookies gooey but I didnt' experience this. I have had that happen to me before but I believe it happened because I had too many in. I followed the recipe ingredients exactly though and I didn't experience this occuring. I would definitely make this recipe again. item not reviewed by moderator and published
I was surprised at how easy these were to make! Some of these ingredients are easily changeable. I will definitely make these again for christmas! ~ super easy as i am only 13 years old. If I can do it anyone can item not reviewed by moderator and published
