Ingredients
- Nonstick olive oil cooking spray
- 2 ounces Brie cheese, cut into thin slices
- 1 (4 by 4-inch) square focaccia, halved horizontally
- 2 paper-thin slices prosciutto
- 1/2 cup lightly packed baby arugula
- 2 thin slices cantaloupe
Directions
Spray a panini grill or griddle with nonstick spray. Heat over medium heat. Arrange half of the cheese over the bottom piece of focaccia. Arrange the prosciutto, arugula, and then the cantaloupe atop the cheese. Cover with the remaining cheese, then the focaccia top.
Grill the panino until the cheese melts and the bread is crisp and golden, about 6 minutes. Cut the panino in half and eat.

I made this with foccacia as suggested, but the one I bought was too salty (it also has garlic and herbs. The flavors together were really good though. I tried it again, only on a toasted English muffin and enjoyed it even more. It would make a great appetizer. I will try it again with a simpler foccacia next time. Yum!

Made this for dinner last night and it was delicious! I couldn't find focaccia, but I used fresh Italian bread and it worked great. Loved all the flavors and the ingredients were totally affordable (even on a college student's budget. Will definitely be making this again very soon!

This is one of my all time favorite sandwiches to make, and eat! I love the combination of melon with arugula. Fabulous lunch. You won't be disappointed!
