Ingredients

  • 4 (6-ounce) pieces sea bass
  • 1/4 teaspoon salt, plus more for seasoning fish
  • 1/2 teaspoon freshly ground black pepper, plus more for seasoning fish
  • 2 cups all-purpose flour
  • 3 tablespoons extra-virgin olive oil, plus 3 tablespoons
  • 3 garlic cloves, chopped
  • 1 (14-ounce) can crushed tomatoes
  • 1/2 cup water
  • 1 tablespoon chopped fresh parsley leaves
  • 1 tablespoon chopped fresh basil leaves

Directions

Season both sides of the fish with salt and pepper. Put the flour in a shallow bowl, dredge the fish, tapping off the excess flour to create a light coating.

In a medium nonstick fry pan, heat the 3 tablespoons olive oil over medium heat. Cook the fish until golden brown, about 3 minutes per side. Transfer fish to a plate.

Wipe out the pan with a paper towel and heat the remaining 3 tablespoons olive oil over medium heat. Add the garlic, tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper and cook at a simmer for 10 minutes. Add the basil and the fish and heat for 2 minutes. Serve immediately.

    My fiance is always asking me to make fish for dinner, but it's my least favorite thing to cook because I get bored with the... recipes I have. I saw Giada make this last week and thought I'd give it a try. I didn't have sea bass, so I used tilapia instead. I read some of the other reviews and decided to use white wine instead of water, which really gave it a nice flavor. I also sprinkled some garlic powder along with the salt & pepper before flouring the fish. I let the sauce simmer for about 30 minutes so that it got nice and thick, which helped it coat the fish. My fiance took one bite and said it was delicious! Now he's planning on me using it for other fish like swordfish. Thanks Giada!Read more

    Followed the recipe, with a couple of minor changes. Made the tomato mixture first (so it would be waiting when I was ready... to cook the fish for dinner) with a can of diced tomatoes, and substituted white wine for the water (which would HAVE to add more flavor!). Reduced the mixture until about 2/3 of the liquid was evaporated, and it was delicious! Browned the fish until it was almost cooked through, then added it to the pan with the tomatoes to finish the cooking. Even my daughter, the pickiest eater on the west coast, loved it!
