Ingredients

  • 4 pairs of frogs legs
  • All purpose flour
  • Clarified butter
  • Salt, black pepper
  • 2 garlic cloves, finely smashed
  • 2 tablespoons parsley, roughly chopped
  • 1 tablespoon fresh basil, finely chopped, or 1 teaspoon dried*
  • 1 tablespoon fresh chives, finely chopped, or 1 teaspoon dried*
  • 1 tablespoon fresh tarragon, finely chopped, or 1 teaspoon dried*
  • 1/4 cup Calvados, heated
  • 1/4 cup dry white wine, plus 2 tablespoons
  • Large Granny Smith apple
  • 2 tablespoons sour cream
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons capers
  • *If dried herbs are used tie these in a muslin bag

Directions

Separate frogs legs and dry thoroughly with a cloth. Lightly flour. Place some clarified butter in a frying pan on the heat and add the floured and seasoned frogs legs. Fry gently. Smother the frogs legs with the smashed garlic and turn the legs after 2 minutes. Add the herbs in the pan and then pour over heated Calvados and set alight - give the pan a good shake and then add the dry white wine. Reduce the heat - cover and allow to cook gently for 4 minutes. Cut the apple in half - scoop out the center with a teaspoon leaving 1/4-inch of flesh around the outside. Heat broiler unit to medium. Place the apple under the broiler for 10 minutes. Season the frogs legs with salt and pepper, add the sour cream, Worcestershire sauce and capers and then the 2 tablespoons of dry white wine. Stir gently to combine. Place the frogs legs on a heated serving dish - coat with a little of the sauce and serve the rest of the sauce in the broiled apple halves.

    I am an experienced cook, and cooked frog legs many times the usual way, sort of 'al ajillo'

    This recipe is fantastic, and although I didn't really followed each step or ingredient carefully (I never do it provided great inspiration for my own version of it.

    YUK person: you can't write a review based on how much you care about frogs' feelings. I recommend you delete it.

    This recipe is excellent! The sauce is great! It would pair well with chicken or pork. I am an experienced cook but have never made frog legs, I have had them at restaurants, but this was my first attempt. I cooked for my family tonight and these were the main course. The legs were so tender that they were actually falling apart as I tried to remove the legs from the pan. The meat was literally falling off the bone! Then on top of that the sauce was REALLY good. Thank you so much!!! Well recommended!!!

    On a side note; the frogs sold in stores are not endangered, they are farm raised people!!! I read a review for another frog legs recipe (Emeril's that stated "I cant believe you are eating frogs... they are endangered!" Well if you knew ANYTHING you would know that grocery stores would not sell endangered animals. To the "YUK YUK YUK" comments on this review... Get a life!!! You are obviously a vegan or vegetarian, or something close to that and don't you have anything better to do than go looking for recipes that have meat in them and make little stupid comments??? You're ridiculous. Why am I wasting my time responding to you freaks? Because you are bringing down the rating of a very very good recipe. Get a job, or a life, or something...
