Ingredients

  • Kosher salt
  • 1/2 pound thin spaghetti
  • 1 pound sugar snap peas
  • 1 cup vegetable oil
  • 1/4 cup rice wine vinegar
  • 1/3 cup soy sauce
  • 3 tablespoons dark sesame oil
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 3 tablespoons toasted white sesame seeds, divided
  • 1/2 cup smooth peanut butter
  • 2 red bell peppers, cored and seeded, and thinly sliced
  • 4 scallions (with and green parts), sliced diagonally
  • 3 tablespoons chopped fresh parsley leaves

Directions

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.

Meanwhile, bring another large pot of salted water to a boil, add the sugar snap peas, return to a boil, and cook for 3 to 5 minutes, until crisp tender. Lift the sugar snap peas from the water with a slotted spoon and immerse them in a bowl of ice water. Drain.

For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tablespoons sesame seeds and peanut butter in a medium bowl.

Combine the spaghetti, sugar snap peas, peppers and scallions in a large bowl. Pour the dressing over the spaghetti mixture. Add the remaining 1 tablespoon of sesame seeds and the parsley and toss together.

    I followed the recipe exactly for this pasta...didn't end up using all the sauce though. It was really good, can't wait to... experiment with other veggies, maybe adding some chicken! I served it with Elie's salmon from the same episode and they were great together. A lot of the same ingredients, too, so that makes it easy.Read more

    To Maureen in Irvine Ca: I don't know what episode of Ina's you were watching, but I also saw this recipe made on TV and... watched it again on the video on this site. Ina never put ANY tomatoes in the recipe and all the other veggies ARE listed in this sites "Crunchy Noodle Salad" made by Ina Garten. Maybe eye glasses will help? The only thing I did different, was to reduce the amount of vegetable oil I put in. Delish!!Read more

    This was very good and easy to make.I made a pound of pasta (suggested by others) and then only used a little more than half... or so because it was a lot. I made the sauce and like others said, I only used about half of it. This was very tasty and accompanied the asian salmon quite well. It was a success. Read more

    I really liked this recipe... making an Asian-type peanut sauce always requires a lot of ingredients, but it was easy... enough. Also, like everyone else said, it does make a LOT of sauce (way more than necessary for the salad), but I just saved about half of it in the freezer and served it over chicken a few days later.     Ima, I was not a fan of yours until I tried this recipe.

    The salad was wonderful. I added some cooked chicken breast and substituted asparagus for the snap peas. It was 14 below... zero here and didn't want to go to the store. My husband wolfed it all down and I had to fight for my share. Thank you Ina and I am now a fan.Read more
