Crunchy Noodle Salad

Ingredients

  • Kosher salt
  • 1/2 pound thin spaghetti
  • 1 pound sugar snap peas
  • 1 cup vegetable oil
  • 1/4 cup rice wine vinegar
  • 1/3 cup soy sauce
  • 3 tablespoons dark sesame oil
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 3 tablespoons toasted white sesame seeds, divided
  • 1/2 cup smooth peanut butter
  • 2 red bell peppers, cored and seeded, and thinly sliced
  • 4 scallions (with and green parts), sliced diagonally
  • 3 tablespoons chopped fresh parsley leaves

Directions

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.

Meanwhile, bring another large pot of salted water to a boil, add the sugar snap peas, return to a boil, and cook for 3 to 5 minutes, until crisp tender. Lift the sugar snap peas from the water with a slotted spoon and immerse them in a bowl of ice water. Drain.

For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tablespoons sesame seeds and peanut butter in a medium bowl.

Combine the spaghetti, sugar snap peas, peppers and scallions in a large bowl. Pour the dressing over the spaghetti mixture. Add the remaining 1 tablespoon of sesame seeds and the parsley and toss together.

    I love this recipe and it has never failed to impress anyone I make it for. The few things I do differently are: I use 1 lb... of whole grain spaghetti as the sauce is too overwhelming with only 1/2. I use more of the red bells, parsley and scallions.     I make this recipe all the time now! I've made a few minor adjustments. I find that the salad is better when made with a... short pasta, such as penne or fussilli. It seems difficult to mix, falls apart and clumps when ever I use long pasta. I also always make it with a whole pound of pasta and the original dressing recipe is plenty to cover the whole pound. Great leftovers. My husband and I fight over who gets to take them to lunch the next day!Read more

    I have made this 5 or more times now in the past 2 months! My husband keeps requesting we take it to all the BBQ's. Each... time I get asked about the recipe :) In a note about the sauce... It DOES make a lot of sauce, but since reading the reviews, I only put about 1/2 to 3/4 of the sauce on the noodles initially and reserve the rest (HERE IS THE KEY!). THEN when you have all those yummy left overs the next day, drizzle some more sauce on the noodles, and they are about 10 times better that next day. I am pretty sure it is because the sauce gets absorbed by the noodles and looses some of its distinct flavor, by adding the sauce again you get a double shot of flavor, from the noodles absorbing it, and the drizzled goodness on top!     I've made this several times already. Each time, depending on what else I'm making, I've altered this recipe's added... ingredients. So far, I've added all types of Asian goodies...baby corn, bamboo shoots, water chestnuts, etc. I've also substitued thin linguine for the thin spaghetti at times. Each and every time it's a WOW from my friends!! There's usually leftover sauce (good thing!) which I have also used as a dipping sauce for dumplings. Ina, I love watching your show...everything is just so short and simple...and that's what works for me!Read more

    The sauce was very very oily and all I could taste was the sesame oil. I followed the recipe to a tee and it still tasted... awful. This is the first dish I have ever made that my kids refused to eat. And they are not picky eaters ! There was too much sauce so I ended up using a whole pound of spaghetti. Don't think I'll be making this dish again :(Read more
