Ingredients
- 2 large navel oranges, zested and juiced
- 1 lemon, zested and juiced
- 3 pounds Granny Smith apples (about 6 to 8 apples)
- 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
- 1/2 cup light brown sugar, packed
- 4 tablespoons unsalted butter
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
Directions
Preheat the oven to 350 degrees F.
Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

I was asked to make applesauce for our family's Easter dinner. After reading the responses to others that have tried it, I decided to reduce the citrus by half, knowing I could add more later, if I thought it needed it. That was the only change I made. It was perfect and brought about many compliments. This is a keeper!

This is absolutely AMAZING!!! I just happened to receive a large bag of apples from a friend and they were going to go bad soon so I decided to try to make applesauce. This recipe is incredibly easy. I didn't count how many apples I used and I didn't have brown sugar so I substituted with a little less than 1/2 cup of sugar and I didn't use as much butter as this called for (maybe half. Also, I read some other reviews where people complained about the level of citrus and spices in this recipe. Disclaimer, my family and I are huge citrus people (in particular me so the amount of citrus called for was perfect! It adds the perfect balance of YUMM. As for the spices, I didn't measure but I'm sure I used about the called for amount. This was great to eat right out of the oven. perfect, perfect, perfect. Ina never fails. This is a must try.

Hi Ina. Let me tell you something about myself. I am 100% percent Italian and I am a GREAT cook I learned in Italy and from my mother. A good cook knows his or her ingredients and spices, how much and what will work. I watch your show and i am impressed by you, I know your your food is with fine ingredients not to much or to little a well combination. I decided to make your apple sauce and herb creme cheese...WOW.....PERFECT....YOUR A KEEPER
