Ingredients
- 2 large navel oranges, zested and juiced
- 1 lemon, zested and juiced
- 3 pounds Granny Smith apples (about 6 to 8 apples)
- 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
- 1/2 cup light brown sugar, packed
- 4 tablespoons unsalted butter
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
Directions
Preheat the oven to 350 degrees F.
Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

I've always been intimidated at the thought of making my own applesauce, but after aquiring bags of fuji apples from a co-worker I figured it was about time! All i can say is WOW. My family loved it! The only modifications I made were only fuji apples, 2 clementine oranges with zest from one, and only 1/2 a lemon with zest. I still think it had a very citrus taste, but yummy. I may cut back the butter next time, as it made it somewhat rich and I think it would be fabulous without the added fat.

Good method. I like the flavor and texture. I would definitely cut the two oranges to one (even with only one, it's VERY citrusy and next time, I will cut the cinnamon. It's a little too strong for my tastes. Still, I was looking for a recipe that would make a yummy, chunky-style apple sauce that was better than what you get store-bought, and this definitely qualifies.

Oh my God Ina. The best I have ever tasted. You should get 5 stars on this one. Thank you so much for a wonderful apple sauce for my roasted pork.
