Ingredients

  • 3 pounds small white potatoes
  • Kosher salt
  • 1 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 1/2 cup chopped fresh dill
  • Freshly ground black pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion

Directions

Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.

Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.

When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

    Excellent and easy to make! I followed Ina's recipe except for the fresh dill because my local market was out today.... Instead of fresh dill I added 1 teaspoon of dried dill to the wet ingredients and 1/2 cup of good quality finely chopped dill pickle with the rest of the vegetables (Bubbies Dill Pickles, in the refrigerated deli section of the market are the best). I also added finely chopped crispy bacon to the top of potato salad as a garnish. Delicious! Thank you, Ina! We love you!Read more

    I thought I was in possession of the best potato salad recipe! But this has a flavor level that is outstanding ... it's... tangy and creamy and just delicious! I used everything the recipe called for with just a few variations. I used Montreal Steak seasoning instead of the pepper, added sliced hardboiled eggs on top and threw in some whole pitted black olives (for my 11 year old). Oh, and this is NOT a German potato salad ... please don't serve this warm - ew! This is now my ONLY potato salad in my recipe book.     I have made potato salad several times before and was always disappointed. I didn't even use all the ingredients with this... recipe and it was still fabulous. I didn't have celery on hand or the whole grain mustard so I didn't add them. I only used about a tablespoon of dried dill weed and 2 tablespoons of brown and spicy mustard. It turned out perfect! Love the taste of the white potatoes and I'll be forever cooking them this way too!Read more

    First time I've ever made a successful potato salad!

    It's the first regular season Green Bay Packer game, and I'm having a party, and I really wanted to do potato salad....I... always have anxiety about it, though, b/c it's always the same story....either the potatoes are too mushy or too hard. Using the small white potatoes made it so much easier to get right. I love the dill, and salt should be adjusted to taste...although I disagree with other readers when they say that there is WAY too much. I held back a lot on the salt and found myself adding more and more. The amount written in the recipe is just about right, but- as other reviewers have pointed out- you MUST use KOSHER SALT....not the regular kind! Thanks for such an amazing recipe!!Read more

    A nice version of classic mustard-based potato salad!

    I made this for a salad potluck and it turned out great! I'd never made potato salad before and it was delicious. A little... zingier than my mom's traditional yellow mustard style. I did use the advice of other reviewers plus added a couple things of my own: 1) didn't use all the salt or pepper called for in the recipe, but seasoned to my taste at the very end of the process. Also ran out of fresh dill so was short of the full 1/2 cup... no problems, 2) used large red potatoes so the cooking time was a bit longer and more dicing was req'd; I kept the skins on, 3) it was very "mustardy" so I threw in one more heaping spoonful of mayo, 4) I sliced a couple radishes into small pieces and added them for color and texture, 5) finally, topped it with sliced hard-cooked eggs. It took me at least an hour to do everything... I don't think my knife skills are on par with Ina's! But I would recommend this highly!Read more
