Ingredients

  • 2 pounds fresh asparagus
  • Good olive oil
  • Kosher salt, plus extra for sprinkling
  • Freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 25 minutes, until tender but still crisp.

    Very good...but monitor your cooking time!!!

    The flavor of the asparagus with the olive and salt is phenomenal. But I do believe her cooking time is way too long. I had... mine in for 20 minutes, and they were a bit mushy. I think it depends heavily on how thick your asparagus is. Check them after 15 minutes, take one out and test its crispness. This will ensure you do not overcook. Other than that, this is simple and DELICIOUS- a definite must have for people looking to change from steaming!Read more

    I'm new to asparagus so haven't cooked it much, but I will say this...I've used this recipe 3 times now, which says a lot! I... never thought anyone but me would eat asparagus, but when I made it the 1st time, my daughter fell in love with it. The reason it got made the 2nd time is because she asked for it! That's when I knew I had a good recipe! My husband and son don't like it to well but that's okay with me...they don't have to like it for me to make it! Keep the simple recipes coming Ina!Read more

    When I spend considerable time on a main dish, I like side dishes that are super simple, and am sometimes disappointed. Not... this time! It couldn't have been easier, and it was perfectly roasted. Since I tend to burn when roasting veggies, I rolled the asparagus around on the pan every 10-15 minutes or so... and this is a good idea also to make sure you're not overcooking.     I would give this a 5 star since its so easy and delicious. But I found my asparagus to be completely overcooked! I think... around 18 to 20 minutes would be more accurate and have better crunchier results. Read more
