Ingredients
- 6 large waxy potatoes (such as Yukon Gold)
- 1 head garlic, divided into cloves
- 1 bunch rosemary
- 1/4 cup extra virgin olive oil
Directions
Bring 4 quarts water to boil. Preheat oven to 425 degrees F.
Cut potatoes into 1 inch cubes and blanch 2 minutes in boiling water. Remove and drain. Place on baking sheet and add garlic, rosemary and olive oil. Season with salt and fresh pepper and place in oven for 30 to 40 minutes, until golden brown. Remove and serve immediately.

perfect! the method used to cook these is perfect, and the potatoes have just the perfect amount of seasoning, and crust on them. i love this recipe and use it often.

Not to many steps and was kinda rustic which I really liked. I loved biting into a whole thing of garlic its a sweet buttery suprise with the potatoes. I liked the boiling step because sometimes I feel I am waiting for ever to cook in oven. They came out perfect I love em!!

If you love garlic like I do, make this dish! The whole garlic cloves are really tasty. The garlic, olive oil, and rosemary are the perfect ingredients to make this potato dish one you'll make again!
