Ingredients

Mustard Vinaigrette:

  • 1 garlic clove, sliced in 1/2
  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • Small splash soy sauce
  • Salt and freshly ground black pepper
  • 3 tablespoons olive oil

Directions

3 cups mixed greens, the darker the better (not iceberg)

Rub the inside of a large wooden bowl with the garlic clove and then either discard it or save it for another use. Put the mustard in the bowl and whisk in the balsamic vinegar and soy sauce (a French secret!) vigorously for about 10 seconds to get a creamy consistency. Season with salt and pepper, to taste. Drizzle in the olive oil as slowly as possible with 1 hand while whisking as quickly as possible with the other hand to emulsify. Lay the salad greens on top of the dressing and toss just before serving.

    I've been looking for a really good mustard vinaigrette and this is the best I have tried. It's really, really fast and... easy. I like that it doesn't have a lot of ingredients and it uses things that you probably always have on hand. I don't have a wooden bowl, so I just used a tiny pinch of garlic salt instead.     I have been trying to find a good balsamic salad dressing recipe for awhile, and this one is it. I alter the recipe slightly... by adding a small amount of finely diced shallot, and a touch of honey, as I find it balances the flavours better. On top of the green salad, I like to finish it by adding some Finishing Salts, bacon bits (made from soy and not that bad for you), home made garlic croutons (made with left over light rye bread) and thinly shaved parmesan cheese (only the good Italian kind). This makes an awesome salad that even your fusiest salad eater will love!Read more
