Directions

Whisk together the cornstarch, sugar and salt in a saucepan until smooth. Add the milk and half-and-half and stir to combine. Bring the ingredients to a simmer over medium heat whisking constantly. Cook until the mixture begins to thicken. Remove the pan from heat and stir in the vanilla, butter cinnamon and cayenne. Pour the pudding into 4 small serving bowls and chill for 1 hour before serving.

    We saw Melissa make this pudding when our adult (just out of college and in her own apartment and cooking for herself! was visiting in 2010. Our daughter, who enjoys spicy Indian and Thai food, really liked the idea of a spicy pudding. And since she was a new cook on a limited budget, she liked how easy to make and inexpensive the pudding was.

    Since then, she has made it numerous times, most recently for our family Christmas dinner, where it held its own alongside my sister-in-law's Buche de Noel and lots of fancy and complicated cookies.

    Our daughter put in just a dash of cayenne from a fresh bottle of cayenne powder which gave the pudding a little flavor kick at the end.

    We just laugh, because everyone thinks the pudding is so fancy....but it is so simple!! And delicious!

    very good...I did what ramageki suggested but instead i used whole milk(no half and half in my home and it was great..just i little too sweet but good. next time 1/4 cup of sugar. thanks melissa and thanks ramageki.
