Campfire Toasties

I love making these with my granddaughter, Emmy. They’re so simple and fun. Plus, they bring me back to childhood, which all great food tends to do.

Special equipment:
pie irons (see Cook's Note)
  1. Set up a grill for medium-high heat by building the coals evenly on the bottom.
  2. Assemble the sandwiches: Generously spray the insides of the pie irons with the olive oil spray. Spread 4 slices of bread with the hazelnut spread. If using peanut butter, spread it on the other 4 slices of bread; if not, leave them plain. Slice the bananas in half crosswise, then in half lengthwise, giving you 8 long slices. Place 2 slices of banana on the bread slices with the hazelnut spread. Sprinkle with just a touch of salt. Top with the peanut butter bread. Spread the butter evenly on the outside of the sandwich and sprinkle with the sugar. Place the sandwiches into the prepared pie irons. Close and trim any overhanging bread.
  3. Place the pie irons on the grill and allow to cook, 2 minutes per side. (If you have a campfire going, you can cook them right in the coals.) Remove the hot irons to a sheet tray, then carefully open. Slice each sandwich in half and serve!

Cook’s Note

If you do not have pie irons, you can use a cast-iron pan with a weight or just wrap them in aluminum foil instead.
