Ingredients
- 4 medium candy stripped beets
Dressing:
- 1/4 cup olive oil
- 2 ounces balsamic vinegar
- Salt and freshly ground black pepper
- 4 cups arugula
- 1/4 cup chopped pecans
- 1/2 cup goat cheese, crumbled
Directions
In a pot of cold water, place beets and then bring to a boil. Allow pot to simmer until the beats are tender but still have slight resistance in the centers. This will take 8 minutes. Peel the beets and slice.
In a small bowl whisk together olive oil and balsamic. Season with salt and pepper.
In a separate larger bowl, toss arugula, beets, pecans and goat cheese. Drizzle them with dressing and serve.

My husband and I love beets- the flavors of all the ingredients just go so well together. And it is so easy to prepare. Have made it with fresh beets as well as canned- good either way. Also, have added sliced red onions. Thanks for a great recipe

This was good. I used diced canned beets instead of fresh. The store was out of arugula so I used a spring mix. Since my husband and I love onion in our salad I added that as well. My husband wasn't a fan of beets but after eating this dish he fell in love and went back for seconds.

I haven't made this salad yet, but had one very similar at Stella's in Minneapolis and it was so good I savored every bite! I believe the beets in the restaurant salad were roasted, and that's how I will make this salad. Stella's also topped the salad with a 3" diameter, 1/2" thick slice of very lightly breaded and fried goat cheese rather than sprinkles. It was heaven! IF ANYONE CAN TELL ME HOW TO PREPARE GOAT CHEESE THAT WAY WITHOUT IT MELTING AND GETTING RUNNY, PLEASE RESPOND!!
