Ingredients
Dressing:
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon brown sugar
- 2 tablespoons lime juice
Salad:
- 1/2 red onion, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1/4 cup chiffonade cilantro leaves
- 2 stalks celery, chopped
- 2 plum tomatoes, chopped
- 1 (15-ounce) can black beans
- Salt and freshly ground black pepper
- Salad mix
- 1/2 cup shredded Monterey jack cheese
For the dressing:
Directions
Add all the ingredients to a bowl and whisk together.
For the salad:
Place first 7 ingredients into a large bowl. Drain and rinse black beans. Place into bowl with vegetables. Add salt and pepper, to taste. Drizzle in dressing. Wrap and place in refrigerator 1 hour prior to serving.
When ready to serve, place salad mix into a large bowl. Add vegetables to the salad bowl and top with shredded cheese.

This salad was great!! The dressing was light! I put it with a Zesty Shrimp Pasta dish!

This is the most refreshing salad! It is bright and lively; with just a little pizzaz to spice up your life!!! My husband's favorite! Great alone with pita bread or as a side dish...year round for New Englanders like us :

OMG, I served this salad last night at a party I had in my home. I was surprised by how many people commented on the flavors and especially by how many of the men were eating and raving it - even a 21 year old! I made this with romaine lettuce (because this is what I happened to have in the fridge, and without the jalape?o (wasn't sure how many would be sensitive to heat. The next time I make it I will used the mixed greens and add the jalape?o.
At first I was concerned with the amount of bell peppers in this salad, and the dressing with cumin and brown sugar seemed "different", but trust me, the flavor of the bell peppers and cumin just blend amazingly well. Also, when I first made the dressing and did a taste test, I thought it was a little bland and too olive oily, if you think this too just remember to salt and pepper the salad well and make sure you let it marinate for at least one hour ( I did two hours and trust me this salad will come out with some of the best flavors ever!
Anyway, this one is a keeper.
