Ingredients
- 1 cup rice, regular or instant, cooked according to package directions
- Cooked shrimp, halved, about 12 ounces
- 1 cup diced pineapple
- 1 cup diced fresh papaya or mango
- 1/4 cup chopped scallions
- 2 tablespoons fresh lime juice
- 2 teaspoons olive oil
- Salt and freshly ground black pepper
Directions
Combine all ingredients in a large bowl and toss to combine with a spoon. Serve immediately.

I made this rice dish without the shrimp. It was so easy to put together and so delicious. I made it for a bridal shower and got SO many compliments. There were no leftovers. I can't wait to make this dish again!

I was hesitant about this recipe when I first saw it, but I had all the ingredients on hand so I decided to try it. I thought it was fantastic! It was as easy as Robin said it would be, and tasted great that night as well as for leftovers the next day at lunch!
