Ingredients

  • 1 pint good quality Greek style plain whole milk yogurt
  • 4 to 5 pieces crystallized ginger, grated
  • 1/4 to 1/3 cup honey, look for orange blossom, clover or sage, plus some for drizzling
  • 1 orange zested
  • 2 pints blackberries

Directions

In a bowl combine the yogurt, grated crystallized ginger, honey and orange zest. Let the yogurt mixture sit for about 5 minutes, the flavors will meld together a bit. Divide the blackberries between 4 dessert bowls, top with a large dollop of the yogurt mixture and then give each dollop a drizzle of honey for a sweet finish.

I am serving this tomorrow for a luncheon and thought I'd try it in advance - actually had it for breakfast this morning with almonds and pomogranate on top! It is really wonderful HOWEVER.....the ginger doesn't grate at all. It gets gummy and sticks to the micro plane. I did see that it stuck to Rachel's plane as well. So, when I make it, I will mince it as best I can and there will be bigger bits of ginger. It tastes very good to me, so I hope my guests don't mind the surprise bits in there. (I did try freezing the ginger, but it didn't help. It also got gummy in my Vita Mix....

Go light on the orange zest and it would be better. I like the former review to add pomegranate seeds and almond slivers. Wish I had read that before making it. It is a good basic recipe for a light dessert, but needs some help. Absolutely need to mince the ginger not try to grate it.
