Bruschetta with Tomato and Basil

Ingredients

  • 1/2 baguette or crusty long loaf bread, sliced (12 pieces)
  • 2 large cloves garlic, cracked away from skin
  • Extra-virgin olive oil, for drizzling
  • 3 small plum tomatoes, halved and seeded
  • 20 fresh basil leaves
  • Coarse salt

Directions

Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Rub toasts with cracked garlic and drizzle with oil. Chop seeded tomatoes and place in a small bowl. Pile basil leaves on top of one another and roll into a log. Thinly slice basil into green confetti and loosely combine with tomatoes. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat. Pile toasts around the bowl of topping. Place a spoon to scoop topping in bowl and serve.

    It is supposed to be simple food. It isn't supposed to be spicy or taste like pico. This is exactly how it Bruschetta... Pomodoro was served to me in Italy. Please do not add cilantro unless you want a salsa.Read more

    This is a great base to start for bruchetta, but I felt it needed some additional ingredients. I added a few tablespoons of... minced red onion, half a tablespoon of minced garlic, dried oregano, and finished it off by drizzling with Emeril's simple Balsamic Vinaigrette recipe.     The only thing I added was a splash of balsamic vinegar-it just puts it over the top. Usually I make this as a light dinner... with a veggie soup but I've also used bagel chips and served it as an appetizer. It's the best!Read more

    I made this and as I followed the directions, I thought the bruschetta itself needed some garlic. Big mistake. Simply... rubbing the garlic on the warm bread is garlicy enough. I added 3 cloves to the tomoatoe mixture because I am a huge garlic fan. I never thought something could have too much garlic. I needed to serve mint gum with this one. Next time, I will maybe add 1/2 clove to the tomoatoe mixture. I also added one shallot instead of the red onion. It gave the bruschetta a sweeter flavor. With my new modifications in mind, I will make this one again soon.Read more

    I had lots of extra tomatoes and fresh herbs. I did a quick search on this website and found Rachel's recipe! It is simply... divine! And so fresh! I added fresh cilantro (highly recommend it) in addition to the fresh basil. Try it once, and you will make it over and over again.Read more
