Ingredients
- 2 lemons
- 1 teaspoon coarse black pepper
- 1/3 cup extra-virgin olive oil
- Salt
- 1/2 pint yellow tomatoes, halved or 2 vine ripe yellow tomatoes, seeded and chopped
- 2 hearts romaine lettuce, shredded or chopped
Directions
Zest the lemons into a bowl. Add the juice of the lemons with the pepper, whisk in olive oil then season the dressing with salt, to taste. Toss the tomatoes and greens with dressing and adjust seasoning.

Refreshing but a bit to lemony. I will use less juice next time.

I followed Rachel's show advise and used what ever I had in the fridge (tomatoe, cucumber and a bag salad. I mixed the dressing in the bowl and tossed all the ingredients. I really liked it but I think I used to much juice as it was a lil' too tangy. I won't even have to write it down it was so easy.
