Paco's Fish Tacos in Lettuce Wraps

  • 2 pounds grouper fish fillets
  • Cooking spray
  • Salt and pepper
  • 1 lime
  • Hot sauce
  • Bib or green leaf lettuce leaves, for wrapping
  • 1 jalapeno, seeded and chopped
  • 1 cup cilantro leaves
  • 3 sprigs fresh mint
  • 3 tablespoons grainy mustard
  • 2 tablespoons red wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1/2 red onion, finely chopped

Heat grill pan or nonstick skillet over high heat. Spray the pan with cooking spray. Place fish on grill, season with salt and pepper and cook 5 minutes on each side, until opaque.

Arrange lettuce leaves on a platter. Place jalapeno in a food processor with cilantro, mint, mustard and vinegar. Turn processor on and stream in oil. Season sauce with salt and pepper.

Take the fish off grill and place on a serving plate. Break the fish into chunks and squeeze lime juice over fish. Add a few dashes hot sauce to the fish.

Pile fish in lettuce leaves and top with sauce and chopped red onions.

    Great for the summer. I used Italian parsley instead of cilantro. The hubby who is a meat and potato guy even liked it. I used tilapia.
    Excellent! We blackened the fish for a little extra kick, but this sauce is pucker-inducing all by itself! :
    Here in Palm Beach Gardens we enjoyed this recipe with blackened grouper cheeks and flour totillas with tomatos and lettuce. Yum -O

    Wow...we loved this recipe. We have had this 4 times now. Tried it once with chicken and it was yummy but the tilapia is a hit. This will be a regular on our menu!!
    Good go-to fish recipe although the type of fish you use does change how good it turns out. I recommend using a tilapia.

    Loved the recipe, perfect for carb conscious people. Substituted BBQ'd chicken for fish...loved the cilantro/mint sauce to garnish!
    Unfortunately grouper is a bit expensive in my area ($20/lb) so I opted for Mahi-Mahi and it worked out beautifully. The sauce was wonderful and I don't think grouper would have improved the meal in any way. Hopefully there'll be more recipes like this one. :-)
    We loved this recipe it was so light without the tortillas. We used halibut. It was delicious. The sauce is fantastic.
    A tasty, simple meal, great for a summer night. Do watch out for the fish skin, and try not to break up the fish into shreds that are too tiny. Watch out for the occasional bone. But these are really delish!
    Absolutely F A N T A S T I C !! Just follow easy/simple intrructions and add
    juice of half or of key lime. Cook more than you think you will need and don't worry about any being left over!
    We also made this with tilapia and it was so tasty! What a nice alternative instead of meat. So many flavors involved!

    My husband loves fish tacos and was especially impressed with this recipe. The sauce was wonderful and spicey. We did add some brown rice to the wraps and feta cheese. SOOOOO good.
    I made this with tilapia and it came out wonderfully. I also added brown rice to the wraps with the fish, since I am not a low carber. This was a very fast and yummy meal.
    This great low carb meal was a hit with my family (even the kids). I like that it has alot of fresh ingredients. Next time, we might use tortillas and add some lemon juice to the sauce!
    I made all three recipes from the show and they are fantastic. Next time I am going to put in a little more time and try cooking the fish on the grill/on some foil to get better texture. I omitted the red onions from the tacos because I just put the guacamole salad right inside the lettuce with the fish, delicious!
    We loved this recipe! Rachel's outdone herself again. I made all 3 recipes from the show (I actuall haven't seen that episode) and my fiance thought it was definitely "a keeper"! My grocery store didn't have jalapenos so I used a very small habanero in the mustard sauce and it was awesome. The avocado salad and zucchini "fries" were perfect accompaniments. Did not miss the carbs at all, it was totally satisfying.
    This meal is so great tasting,and the best is that is a low carb plate.
    Another great thing is that it's easy to make and in not so much time because like Rachel Ray saids you make it in under 30min.
    I had to use Halibut rather than Grouper due to local availability but this recipe is absolutely delicious. Highly recommend.
