Ingredients

  • 1 large ripe pineapple
  • 1 lime
  • Vegetable oil or cooking spray, to coat grill
  • Honey, for drizzling

Directions

Preheat grill or grill pan.

Cut ends off the pineapple. Stand it upright and cut off the skin in strips. Quarter the pineapple lengthwise and cut out the core. Cut each quarter into 3 spears. Zest the lime and reserve. Cut the zested lime in half and squeeze the juice over the spears. Brush the grill pan or outdoor grill with vegetable oil or spray lightly with cooking spray. Grill pineapple until evenly marked all over, 5 minutes. Garnish spears with lime zest and drizzled honey.

    Loved this easy side! Next time I think I will skip the lime juice on the pineapple and just use the zest and honey on top.

    A perfect complement for the Teriyaki Chicken and Ginger-Carrot Slaw.
    For me (and husband it was a new flavor sensation with the lime zest and honey drizzle added.

    My husband and I cannot wait for pineapple season just so we can make these easy but delicious spears. Today for a Mother's Day brunch I made this recipe then chunked up the spears and used them to make a fruit salad of pineapple, halved green grapes and raspberries. The grilled pineapple worked beautifully and for that matter the salad itself was beautiful...green, red and yellow, very pretty.
