You can create up to five timers

Ingredients

  • 2 roasted red bell peppers, drained well, chopped
  • Salt and pepper
  • 1 small clove garlic, chopped
  • 2 tablespoons balsamic vinegar, eyeball it
  • 3 tablespoons extra-virgin olive oil, eyeball it
  • A drizzle of honey
  • 4 romaine hearts
  • A handful pitted kalamata olives, chopped

Directions

Place roasted red bell peppers in food processor bowl. Season them up with salt and pepper. Add garlic and vinegar to food processor. Turn processor on and stream in extra-virgin olive oil and some honey. When dressing is smooth and combined, stop and adjust seasonings.

Chop romaine into bite-sized pieces and put in a salad bowl then pour the dressing over lettuce, toss and serve. Garnish with chopped olives.

    I really liked this. My husband and I love Garlic so i used 3 cloves and was great especially if you like balsamic. I used my own roasted red peppers that I can myself so it was great.

    It is a good foundational recipe but I did have to kick it up a notch. I used 3 garlic cloves and 5-6 TBSP vinegar. I've made it twice with my modifications and the second time I used 5-6 TBSP red wine vinegar and both times it turned out great. I made it for a dinner party and everyone loved it (both times. I used about 3/4 tsp salt and I actually forgot the pepper altogether. I'll try it next time but I honestly didn't miss it. I roasted my own bell peppers, I've never worked with jarred but I figured fresh is always better. Have fun experimenting with both vinegars! You'll find that both vinegars provide their own dimension of flavor and color.

    I had misplaced a Roasted Red Pepper Dressing several years ago and could not find it. I still dream about this recipe and googled Roasted Red Pepper Salad Dressing and up popped your recipe Rachel. It was exactly as I remembered. Delic. Keep up the great recipe giving.
