Ingredients

  • 2 (14.5-ounce) cans chick peas, drained and rinsed
  • 4 cloves garlic, minced
  • 2/3 cup tahini, well stirred
  • 1/4 cup chopped sun-dried tomatoes in oil, drained
  • 1/4 cup lemon juice
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley leaves
  • 1/2 cup light olive oil
  • Pita chips or corn chips, for serving

Directions

In a food processor add the chick peas, garlic, tahini, sun-dried tomatoes, lemon juice, and salt and pepper, to taste, and puree until the mixture is soft and smooth. Remove from the processor to a serving bowl and stir in the chopped parsley and olive oil. Adjust the seasoning with salt and pepper. Serve with pita chips or corn chips.

    Made this last night and it was excellent. I also had some issues with consistency. I added some more olive oil and it seemed to fix the issue. Also, I halved all the ingredients so I thought maybe I screwed something up there, but it worked out. I used sun-dried tomatoes in oil that were already minced. I added the recommended amount in the hummus itself, then also spooned some on top when ready to serve and sprinkled some pine nuts on top. Worked out really well. I'll make this one again.

    Hummus...if you like taste/texture...this is a great version.

    This is a go to snack or party dip we always use now,and it's fabulous ! Easy ingredients and a crowd pleaser.Kids will eat it too,with veggies ,tortilla chips or toasted pita rounds.We've even used it as a french bread sandwich spread instead of mayo,it's delicious !
