Ingredients

  • 1 large plum tomato, seeds squeezed out, roughly chopped
  • 1/4 cup chopped oil-packed sun-dried tomatoes
  • 1 tablespoon minced fresh ginger
  • 2 garlic cloves, peeled
  • 1 to 2 tablespoons balsamic vinegar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 cups washed mixed greens (any combination of romaine, red leaf, Bibb, Boston lettuce, mustard greens, spinach)

Directions

In a blender, combine tomato, sun-dried tomatoes, ginger, garlic, and vinegar. Process until finely chopped. Add water, salt, and pepper and puree until smooth.

Divide greens evenly among 4 salad plates and spoon dressing over top.

    This is a wonderful salad dressing! I made it last night and put it over a bag of "spring mix" salad. I added mushrooms and red and green bell pepper, and made a quick quinoa/rice flour bread to go with it. Without the bread, it would not have been enough for a meal, but as it turned out, it was perfect. I did modify the recipe: I thought I remembered on the show she said 2 tsp of ginger, and I think I even put a tad less than that. Any more and it would have been overpowering, in my opinion. Yes, it is thick, but I like that.
    Next time I will try the other additions to the salad mentioned in the reviews!

    I love all the ingredients in this dressing and was excited to try it. Unfortunately, it tasted terrible. Luckily it was an easy fix with some bottled dressing on hand. I am not sure what I did wrong. I double checked the recipe and I did it exactly like it stated. :(

    This is SUPER easy to make and I had all the ingredients on hand. (Freeze your fresh ginger and cut off what you need, when you need it! My husband is cutting out fats and this is a perfect change from the norm. If you want oil in your dressing that's fine, but this is an EXCELLENT recipe for a fresh dressing. The only change I might make next time, is more garlic!! Can't wait to try it with pasta and chicken. Thanks!
