Ingredients

  • 8 radicchio leaves
  • 1 cup quick-cooking rice
  • 1 teaspoon garlic and herb seasoning
  • 2 teaspoons sesame oil
  • 1/4 cup pre-shredded carrots
  • 1/4 cup chopped scallions
  • 1 pound shredded cooked pork loin
  • 2 tablespoons soy sauce, plus extra for dipping

I had leftover pork from a roast that hadn't gone over well. I shredded it and tried out this recipe. It was absolutely delicious!! Even my 2 year old asked for thirds.

I seasoned the Pork Tenderloin and cooked it in the crockpot. When I got home from work the meat was already cooked. I followed the recipe, except I used iceburg lettuce. This was a fast and delicious recipe. My family loved it! Thanks, Carol
