Ingredients

  • 8 ounces orzo
  • 2 cups frozen early peas
  • 1/4 cup olive oil and vinegar dressing
  • 1 tablespoon lemon juice
  • 1/4 cup freshly chopped mint leaves
  • 1 (4 ounce) package garlic and herb crumbled feta (recommended: Athenos)

Directions

In large pot of boiling, salted water, cook orzo per package directions. When orzo is al dente, remove from heat and add frozen peas to cooking water. Let sit for 1 minute.

Drain and transfer to a serving bowl. Stir in remaining ingredients. Serve warm.

    Wow! It's very rare that a recipe can be this easy and still pack a delicious punch. Hats off to you, Sandra! It really took the right amount of time that was listed, and I was shocked at how well the mint and feta worked together. This one is a KEEPER!

    Different! A bit bland as is. Needed to add more seasonings like salt, pepper and just whatever sounds good. I'm thinking of trying fine chopped bacon to give it an edge next. Still giving it 5 stars because I would make it again.
