Directions

Heat oil and 1 tablespoon butter in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, add to pan and sear until golden, about 4 minutes each side. Remove chicken from pan, and set aside. Add remaining butter and onion, apple, garlic, thyme and bay leaves. Saute until apple begins to get color and onions soften, about 6 minutes. Add flour and stir 2 to 3 minutes. Nestle chicken back into pan, add cider, bring to a boil, reduce to a simmer and cover. Cook until chicken is cooked through, about 12 minutes.

It reminded me of an Asian dish, very spicy with a hint of sweetness. I think next time I'll add pineapple and more brown sugar to give it a little more sweetness. Didn't have brandy so I used 3/4 T of vanilla, as suggested. I cooked it down for quite a while and it made a dark brown sauce. I had never used apples in a savory recipe before and took a chance on this recipe. I think I've made it at least 20 times now. This is a keeper! I usually skip the butter, sometimes omit the bay leaf (don't always have it and if I don't have any apple cider (sometimes hard to find when it's not in season, I will use apple juice. Everyone in the family, including my picky 8-year old, LOVES it! I have also make this with boneless pork chops instead of chicken. Delicious either way! On a busy night, I have finished this in the crock pot (seared the meat, sauteed the apples/onion, added the cider, then put everything in my crock pot on low and had dinner ready when we came back from my son's soccer game. Delicious recipe and one I will repeat. I had thicker chicken breasts and thinner ones would have been much better. Aim for 1/2 inch thickness but be sure not to overcook. Delicious fall recipe! Because we have a gluten and dairy free family member, I skipped the butter and used cornstarch for a thickener, and it was still great. I think a little bacon added into this recipe would be superb, and it would be just as good with pork. I was really surprised at the wonderful flavor of these ingredients. Never would have thought of apple cider in chicken, but with the garlic, onions, thyme and bay leaves (+ green apple slices) that really took the flavor and experience up to a new level. As for the brussell sprouts, I instinctively added a little water while after they have been cooking a bit and I could see the browning on them. I also put a cover over them that guaranteed tenderness in the middle. I love brussels sprouts just like Sunny. I tried the other apple chicken recipe on this site (using cider vinegar instead of apple cider). My boyfriend like this one better, probably because it makes more of a "gravy" than the other recipe. I think both were pretty good. My only suggestion for this one is to cut the dried thyme in half and to make sure you keep the apple and onion pieces on the large side. I tried this because I wanted to do something light and seasonal. I used a bottle of Octoberfest beer instead of the chicken broth and it worked well. I also used thinly sliced chicken cutlets which really shortened the cooking time. I would make it again for sure but agree that you need to tweak the seasonings to your taste. I have been trying out new recipes for when my husband gets home from Iraq. I saw this one on the show a few months ago so I got the recipe and finally decided to try it to see if my husband might like it when he gets home. I had it with stuffing, and I thought it was absolutely delicious! My neighbor tried it as well. She hates apples, and even she raved about it! I did think there was a little too much thyme. This recipe is the best. Everyone in my family, including the kids, loved this chicken dish. I decided to make more than 4 chicken breast (because we are a family of 5) and used more apple cider than it called for so that we could use the sauce with our mashed potaotes. Aslo, I used more apples as one apple just did not seem like enough for all the chicken. I read the previous reviews before I prepared this and I notice someone mention BALSAMIC VINAGER. We tied it both ways, with the BV and without. It was delicious without it, however the balsamic vinager added that extra kick we believe it needed. I made this recipe exactly as she did, and it came out ok. It was tasty enough, but I was expecting more of an apple tang, since apple cider is tangy. If I make it again I will use at least twice the amount of apple, and experiment with apple cider vinegar or something. It was definitely a down home comfort meal; I served it with yukon gold mashed potatoes on a rainy night. Would have been good with some stuffing too! I used 6 chicken breasts and then cut them in cube size pieces once they were seared and removed from the pan. I also made a pot of white rice which went well with the apple cider gravy. I only spent $17.00 and that is because the apple cider was $4.99!!! I wasn't sure if apple juice would work but I think that I will try natural apple juice and a tablespoon of apple cider vinegar for an extra twang and to save a few dollars. After watching this episode, I decided to make the entire meal for our family and guests. Everthing came out great, and in fact, I couldn't find actual apple cider, so I substitued the fresh apple juice that you can buy in the refrigerator section and added a few tablespoons of apple cider vinegar. It had a nice "zing" from the vinegar which went well with the semi-sweetness of the Granny Smiith apples and vidalia onions. I also used fresh thyme rather than dried, as I believe that's how Sunny made it on the show. I LOVED this recipe. I was able to use all ingredients I already had and only had to purchase the apple cider. I wasn't able to find this in the regular grocery store (I'm guessing it's only available around the winter holidays but luckily I have an Apple Barn in my city so I found some great unfiltered apple cider there for a very reasonable price. I loved how quick and easy the prep was, as well as how the dish is just slightly sweet and savory because of the onions and garlic. Didn't really come out how I thought it would. I used a smaller pan, so it took a long time for the chicken to cook thoroughly, and by the time they were the apples were extremely mushy. Family liked it, but said not to make it again. Too sweet. Would probably sub out a lot of the apple cider for chicken broth (home made), if I tried it again. Would probably work well/better with pork. But the seasoning was flavorful (added a pinch of salt and some pepper). The fresh thyme was very nice, though only used one tsp instead of too, which was more than enough of the dried. Fresh thyme would probably be great! And the thickness of the sauce was perfect. I saw the episode and then went looking for the recipe. I thought it seemed familiar, and then I checked Cook's Ilustrated's website for a pork recipe that I use fairly often. The sauce for the chicken is just about the same in all the ingredients: thyme, applies, cider, garlic, and bay leaves. The difference lies in that the Cook's Illustrated pork recipe asks for fresh thyme rather than dried and also uses 3 ounces of bacon in the sauce, and the cider sauce is made separately from the pork and onion/apple mixture. The roux for the sauce is also deeply browned giving a much better flavor. So, for those of you who didn't feel this had enough flavor and the sauce was too thin then I would suggest browning the roux until the color of caramel or peanut butter, adding browned bacon and using the bacon fat in the sauce. Since the pork cooks separately from the sauce it is less likely to thin the sauce with meat juices although these can be added back into the cider sauce to make the consistency and flavor what you would like. item not reviewed by moderator and published

We loved this chicken! The instruction for adding flour and chicken before the cider need to be re-written. Add the flour, then the cider and onced mixed and thickened to your liking cradle in the chicken to finish cooking per the instructions. For a thiner sauce, add less flour.
