Ingredients

  • Oil, for frying
  • 4 ripe plantains, peeled
  • Salt
  • Garlic Mojo, recipe follows

Directions

Preheat oil in a fryer or Dutch oven to 365 degrees F.

Peel the plantains and cut into 1-inch pieces. Place into preheated oil and fry for 5 minutes or until they begin to brown. Drain them on a paper-towel lines plate. Flatten them using a Tostonera or the bottom of a metal can and fry again at 385 degrees F for approximately 3 minutes. Drain again and sprinkle with salt and Garlic Mojo. For softer fried plantains, soak for a few minutes in salted water after the first fry, drain and fry again.

Garlic Mojo:

8 garlic cloves

1 teaspoon salt

1/2 cup sour orange juice or 1/4 cup sweet orange juice plus 1/8 cup fresh lime or lemon juice

Chop up the garlic very thinly or crush using a mortar and pestle or food processor with the salt to form a thick paste. In a mixing bowl, combine the garlic paste and juice, and let the mixture sit at room temperature for 30 minutes or longer.

    while livin in puerto rico with my aunt, this was one of my favorite recipes...we make them without the mojo...there is... actually a salsa that goes with this that makes it 100times better..of course if u eat these without the salsa they taste rather basic...the salsa is tomatoe ketchup mayo and chopped up garlic..and the garlic is what gives it the tangy awesome flavor...try it and you will change ur opinion and realize how delicious tostones really are!Read more

    too much effort, not enough flavor

    I haven't had fried plantains since high school, and was excited to have them with this menu. Honestly, just out of the... fryer they were best, but even then, just OK. Not even the garlic mojo could save these. Boring.Read more

    The recipe methodology given here is accurate, but it is using the wrong plantains! For "Fried Green Plantains" you... need 'green' plantains - not ripe! If you use ripe plantains you will have mush on your 'toston smasher' or a pice of plantain stuck on the bottom of your pot!Read more

    There is a big mistake on the recipe, this is done with green plantains, you use ripe plantains for Platanos Maduros. The... tostones are delicious even without the mojo.Read more
